comparing a cow to an almond tree
cow drinks 14000 litres per year - Almond tree 22,000 litres irrigated ( every year to maturity )
Cow produces 3000 plus litres per year ( 9 months) - Almond tree approx 30kg (4-5 year old) to produce 4.5 litres concentrate with more water(98%) to make 260 litres almond milk.
Cow produces 500kg fertiliser per year - Almond tree requires synthetic fertilisers ( Petroleum based ) and is sprayed with fungicides and pesticides 8-12 times per year.

Why go to all this trouble to replace dairy with all these recipes. If dairy is bad then just cut it out of your diet.
When I learned that sugar and diary was unhealthy, I just stopped eating those things. Just like processed meats. I haven't eaten a hot dog in two years since I learned how bad they are for you. Now only eating fish 🐠🐟 and chicken (dark meat ) 🐔.

Goat and sheep cheeses can be excellent sources of nutrition and are often easier to digest for those who can't tolerate cow dairy. Yes, there are several alternatives to peanuts and peanut butter that you might enjoy:
Almond Butter: Made from almonds, it's a popular alternative with a similar texture and taste.
Cashew Butter: Creamy and slightly sweet, it's a great substitute.
Sunflower Seed Butter: Made from sunflower seeds, it's a good option for those with nut allergies.
Tahini: A paste made from ground sesame seeds, often used in Mediterranean and Middle Eastern cuisine.

I understand your concern. It's true that much of the soy available today is genetically modified. If you want to avoid GM soy, look for products that are labeled "organic" or "Non-GMO Project Verified," as these certifications ensure the soy is not genetically modified. Choosing organic and non-GMO soy products can help you avoid potential issues related to GM soy.

It's wonderful that your grandmother lived a long and healthy life enjoying dairy products. Everyone's body is different, and what works well for one person might not work for another.
