The dough sticks to everything but itself. I am gluten intolerant too, and an avid baker. Keep on trying, you get the hang of it. 😉 a good book is "intolerant gourmet" by Pippa Kendrick, from 2012 It isn't vegan but most recipes can be easily made without meat or dairy.
The cookies would have been fine. They just were hot and did not 'set' yet, which is why they broke when you transported them. Hope you did not throw them out!
Just a tip...I love to bake...so here is the tip. For cut out cookies. Leave them to cool on the baking sheet for 10 minutes. Still remove one at a time carefully. And let cool the rest of the way before frosting. I've made thousands of Christmas cut out cookies over the years. From and old family recipe...handed down from my mom, my grandmother, great grandmother and so on. I don't have the recipe myself any more as I have had to go gluten free. But it's still in the family.
You can always search what you can substitute things with if you don't have a specific ingredient. Don't be afraid to experiment. My mom never followed baking recipes too closely so I don't either and they always come out just fine 🤷♀😅
Really recommend Loopy Whisk for vegan baking recipes (when you're feeling brave enough to try again!). She primarily posts gluten free but they are also plenty of vegan ones. I've made dozens of her recipes and they always work perfectly!
The secret with cookies is not to touch them till they are cool. They come out of the oven seemingly in solid shape but are actually still quite molten until they cool. I'd say yours tasted delicious.
Love these personal type videos. Cooking is like art you put you into the dish. Baking is science there is a set path you must follow to get the desired result. A little tip let your hot cookies sit on the hot pan for about 5 minutes. This allows them to set up.
Taking the cookies off the cookie sheet and hearing “oh no! Ahhh” And then the next clip you smiling and looking at the camera 🤦♀️😆 That moment of comedy was so relatable and made me laugh out loud. Love you videos.

If I couldn't find molasses, my 1st choice would be dark syrup, second choice light syrup, 3rd choice maple syrup, 4th any dark non-liquid sugar, 5th white sugar. I found something called "basterdsuiker" in Dutch. From looking at the pics it looks OK. You could try that instead of molasses, and add a spoon or two of water. Molasses is just unrefined beet sugar or cane sugar. If you can't find anything that resembles dark sugar, just use white sugar. You might also find molasses in a shop that sells horse food. But they typically sell molasses for horses in very large containers. So unless you have a horse, it's not very practical. Thanks for the video.

As for the cookies, next time allowing them to cool before touching them at all they will help, even if just 5 minutes! but the decorated ones look super cute! I do admire how well you wrapped the little burritos, I always mess up mine 🥲
Don't be discouraged by the baking! You can probably get a proper cookie sheet from a local thrift store for a few dollars and then that problem will never happen again! You also want to let your cookies set on the sheet for 5-10 minutes after the come out of the oven. But I bet they tasted nice! I hope you try again soon because the only real way to improve is practice, after all.

If you want to make the cookies again, I live in the NL and always replace molasses with either beet sirup (which you can often buy in Germany) or the thicker pannekoek stroop - it's a bit lighter in color but it tastes delicious and always works great for American gingerbread houses 🍪

If you don't have molasses try golden syrup, flavour will obviously be different but same texture for the baking. A dark rich honey would also work.
Since she is vegan, honey wouldn't work. But maple syrup might work. 🙂
