Marshmallows from scratch. These taste so good compared to commercial marshmallows.

  • With the summer months and camp fires coming up learn to make homemade marshmallows. These taste so much better than store bought and they are really easy to make.
    Marshmallows
    3 (1/4-oz.) packages unflavored powdered gelatin
    1 cup water
    1 1/2 cup sugar
    1 cup corn syrup
    1/2 teaspoon salt
    1 teaspoon vanilla extract
    1/2 cup powdered sugar
    In your mixer with a whisk attachment, sprinkle the gelatin over 1/2 cup of the cold water and whisk to combine. Let it stand about 10 minutes while you make the other mixture over the stove.
    in a medium saucepan combine the sugar, corn syrup, salt, and the remaining 1/2 cup water. Cook over high, stirring until the sugar is dissolved. Clip your candy thermometer to the side of the pan. Continue cooking until the mix reaches 240 degrees on a candy thermometer, about 10 minutes.
    Immediately, turn the mixer to medium-low speed and carefully drizzle in the hot syrup. Once all of the syrup is combined, gradually increase the mixer speed to high speed, and beat until the mixture is very thick and fluffy, 10 to 12 minutes. Stir in the vanilla.
    Pour the marshmallow mixture into a 9x9 or 9x13 pan that has been sprayed with cooking spray and quickly smooth the top by spraying your hands with cooking spray and patting the mix down. Let the mix sit until fully cool lightly covered.
    Place powdered sugar in a bowl. Using a knife or scissors that have been sprayed with cooking spray cut the marshmallow into about even squares. Coat the cut marshmallows in powdered sugar until no longer sticky a nd dust off the excess powdered sugar.
    Put the marshmallows in a ziplock or air tight container up to one week.

    If my memory serves me right, cutting with a warm wet knife helps; rolling the marshmallow in toasted coconut is good too!

    Oh my! That mixing bowl is such a sticky mess at the end. I think I would have to make up some hot chocolate & pour it into the bowl then into a large mug & enjoy with hot buttered toast. Yum 😋

    New subbie here! I just love how real you are. You do not edit out your “blurbs” with words or thoughts!     peppermint totally rocks in a marshmallow. drop into hot chocolate in the winter. been making my own marshmallows for years. gave peppermint marshmallows and home made cocoa mix to my coworkers for Christmas.

    Check with Kitchen aid. A lot of the older ones are repairable. I have one from 1994 and if it breaks then I will try to get it repaired.

    Okay... Once your marshmallows are put into the pan, before you let it set up and it is still gooey, have on hand 1 to 2 cups of finely chopped walnuts. Sprinkle the walnuts evenishly over the marshmallows and press into the top with coconut oiled (or oil of choice) fingers. You can use more or less nuts, your choice. I prefer to dust my marshmallows with potato starch (no flavor to it) or cornstarch or arrowroot in a pinch. For me, powdered sugar is too sweet. Once the marshmallows are set up and ready to cut, melt 1 to 2 bags of chocolate chips (1 bag of dark chocolate and 1 bag of semi-sweet is my fav) in a double boiler or a pot over hot water and have ready along with a large baking or cookie sheet lined with waxed paper. Oh, a fork or a few toothpicks. Cut the marshmallows, dust as preferred or if wanted since they are going to be coated, stab with a toothpick and dip in the melted chocolate and lay on the waxed paper to set up. You can also lower a marshmallow into the melted chocolate with a fork. Keeping the chocolate over hot water keeps it thin for dipping. Wah-la! You have the
