The Syroco is an amazing design. I can't wait to see it in motion.

The Baltic race looks fantastic. Keen to keep up with that one

Hard to wrap my head around such large kites going so fast, I would have thought the drag would collapse the structure or simply be too high to achieve the goal.

It's not a kite: it's a paraglider, with a very high aspect ratio.

really surprised they did not use hydrofoils as those cause less drag than a hull

Can't wait to see those speedsters on the water. I'd love it if they got it right on first try. That would mean they're super human engineers and designers. But I've got a $100 that says they don't reach 80knts this year.
    We shall see.

You comment that "raising enough money to host the cup on home waters is not possible" is misleading, because it suggests that there are costs associated with the event which NZ can't afford. This is clearly not the case. The only thing that makes it "not possible" is that ETNZ set a hosting fee which would negate any benefit accruing to NZ from hosting it.

Wouldn’t the maximum possible speed a sailboat could go just be whatever the wind speed is at that current time? Can someone explain how they would go faster?

I think you're on the wrong channel mate. Usually, AC boats go 3x the wind speed. 2x is normal now days. The only drag forces are the drag from the fuselage on air and the foil (or fin) drag on water. So, because of the sails profile works like a wing, the speed it's not straight down wind (ie following wind speed and direction), instead the wind direction it's broad reach (angled). So, force from wind is used to provide pressure to the sail, traveling faster than wind but in another direction.

If one combined multi wing STOL tech for max lift with computer controlled slot management and modern build materials .....

Не верю. Окучили богатого спонсора. Невозможно получить рекордную скорость на мягком крыле парафойла. Или надувастик или жесткое крыло.
