WE really enjoy your videos and so far have liked every recipe of yours that we have tried . Today I made this cheese cracker recipe, using the Good, full fat small curd brand of cottage cheese, the grated cheddar, the nutritional yeast, and since I am not willing to pay 15.00 for a pound of cheese powder that I may never use again, I went to Target and bought a box of Good and Gather mac and cheese, I used the cheese powder packet from the box, it had more than enough cheese powder for the recipe, and it worked fine. I do like the flavor of these crackers. and they did spread just fine. However I cooked them for the time the recipe calls for, but after the full cook and cool time, they are still very bendy. So I am putting them back in the oven for another 30 min and will see if they will crisp up, I hope so. I will def. try again till I get it right, good recipe, thanks Steve!!!

Doctor has told me to make sure to get 1200mg of calcium/day, and I've been looking for some ways to do that beside drinking milk or adding cheese to my salads--and I just happen to have nutritional yeast, Anthony's cheese powder and a new block of Cabot Seriously sharp cheddar. Gonna be making these today!
I tried them with ricotta. I didn’t have cottage cheese. They tasted good but they didn’t get flat enough. Then I tried them using Good Culture cottage cheese. They came out perfectly. I might use a little more cheddar powder next time to make them extra cheesy. Thanks for another great recipe!
What a fun story to Better Cheddar in your life! I made your last Cottage Cheese Chips recipe and just didn't like the flavor, and I had to bake quite a bit longer and still found it not getting crunchy. I don't have a dehydrator or would have gone that route to try to finally getting them crispy. I think made two missteps: the cottage cheese brand recommended by the Keto Twins (Good Culture 4% milkfat), and the Everything but the Bagel seasoning I used. BUT, this cheddar powder is making me anxious to try this again, and I will use the Kemp's brand you demoed available in my area. As a cheese lover, how can I say no to cheddar;) I'll try to give a progress report eventually....need to get some cheddar powder. Thanks for continuing to perfect this cracker Steve.

I tried this today, but they ended up with slightly burned bottoms (every oven is different). I’ll try again and shorten the main cook time and let you know. They still taste great and love that you’re willing to do the research to create these great recipes!
Another possibility is to put a baking/pizza stone or steel on the bottom shelf of your oven and cook the crackers on the medium shelf (this is what I do). The baking stone/steel will even out the heat and likely protect the bottom of the crackers from direct heat. Let me know if you give that a try.
Just tried this recipe. I used 1 cup of 1% Cottage Cheese because that is what was on sale. Added 1 tbsp of clean-ish Ranch Seasoning. Blitzed in small food processor. After 2 rounds of 40 mins at 225f the crackers were firm to the touch but still somewhat pliable. (My 1 rack top oven might run cool.) I decided that just sitting in a warm oven wasn’t going to dry them out enough so I peeled them off the Silpat and put them on a cooling rack to get some warm air underneath and baked them for another 40 mins at 225f (probably 200f in my top oven) and they did something cool…they curled a bit and really look like chips! I am excited to try more flavours because this was so easy. Thank you for making keto easier through cool recipes and techniques. I have a photo of the result if you’d like to see.

Regarding trying flavors for a corn (chip?) recipe- I will risk boring you with my latest favorite ingredient- cooked spaghetti squash. I love the creamy, almost creamed corn flavor, and I do a sort of fake rice pudding with it. We are having a delicious time with my experiments! Best wishes and many thanks for all your efforts!

Definitely want to give this a try. I tried the microwave version after seeing keto twins' video, and for me it was a flop. I was sad to see the ingredient list for the cheddar powder (contains palm oil and maltodextrin). Maltodextrin is terrible for spiking glucose. That being said, thank you for always working hard at tweaking the recipes ❤ Many options and flavors to try!
@@SeriousKeto the carbs aren't the problem. I'm more concerned with the maltodextrin d/t issues with glucose & insulin spikes, but also causing a disruption in the GI tract (dybiosis). For myself, I've had terrible issues with maltodextrin. Even a supplement containing organic rice maltodextrin recommended to me by my naturopathic Dr caused me serious gut pain, etc... Palm oil is a known inflammatory, if it's hydrogenated. To its credit, I don't see on the label that it's listed as hydrogenated, so hopefully it isn't. I just have so many issues with food/ingredients, I have to read everything on every label. I hope to find a cheddar powder without maltodextrin, that would be wonderful. I have made crackers with nutritional yeast and they were fantastic. So if nothing else, maybe I'll try using just nutritional yeast. Thanks for your reply 🙂

Thank you for the kind words. I was a corporate trainer for many years, but that's as close as I got to professional voice work. I still have one more idea to test for a corn tortilla chip, but it's going to be "dirty keto" and I'm sure I'll catch some heat for it from the keto police. 😉
Going to try this recipe, but I have a quick question. My large kitchen oven is convection and I have the Annova oven. Which oven should I use? I notice even with Sous Vide and % turned off, there is often still some moisture in the Annova. Wondering if that means I should use my convection or regular oven. Can't wait to try. It would be a slightly different flavor, but I don't see why it wouldn't work. Maybe try it with a tablespoon of nutritional yeast.

I used my regular oven and didn't have convection turned on. I don't think a standard cookie sheet would fit in the Anova.
