Bubble Sugar Tuile Garnish: How to Make It

- I'm making a single ingredient bubble sugar tuile garnish in today's video. You can leave the tuiles clear, cook them a bit more so they are caramelized or add colour. I like to use them to add height to desserts because they look super pretty.
You seriously will not believe how easy this garnish is to make, it's one ingredient, glucose. Simply spread the glucose in a thin layer onto a silpat and bake at 300 F for about 30 min to an hour. This is a big difference but really depends on your oven and how quickly it cooks. Oddly the oven at the restaurant takes longer to cook these than my home oven does. So my advice is to just keep checking on the sugar and making sure it's not burning or over cooking.
Garnishes like these are really good to have in your repertoire because they can be pretty rapidly whipped up if you're ever in a pinch. Also they just look super cool.
Thank you for sharing your technique for making these. The results look excellent - looking forward to trying it myself.
This channel is an underrated gem!
This is pure ART. Well done

Thank you for this ☺❤
I adore this!!
Thanks for this lovely video. I made them & turned out lovely. How do we store them? I stay in India & we have a humid climate.
And can these be made using corn syrup? Thanks
That really good
Thanks for sharing the recipe. Can we make ahead and store it. If yes how can we store for many days.
Looks awesome.
How do you store them?
Awesome tip !
Thank you! Glad you enjoyed the video!
Just watched your videos in just one night. Lol
Ps. I love your channel.

Nice information👍👍
Omg i love your channelll
Thank you! ❤️🙏
Nice one
thank you
Very good but what is name of this glucose?
Hi, Thank you for this tip. I will definitely try it. Do you think it will be possible to manipulate it into a slight curve? Thanks
You should be able to yes! We’ve made different shapes and sizes of these at the restaurant and they’ve worked. 😊
KAC Creative any idea how to make it into round shape?? should I blend the baked isomalt into powder and mould it to round shape and bake it again?
Muito obrigada! 😘
Can you do this with melted isomalt or melted sugar?
Can I do this on butter paper?
Is it possible to do this with other ingredients? Like honey or maple syrup?
How do you store them?
Niceeee
Great tip! I unfortunately don't have glucose syrup readily available. Can we make the glucose syrup from scratch?
You can just boil sugar and pour it on mate
@@BROWNSTALLION1000 how about maltose? Would it give the same result?
Ova priča kao navijena, a ova veštačka intelegencija koju koriste ne može da prepozna tačno šta ona izgovara i imamo razliku između onoga šta ona izgovara i onoga šta je napisano.
How to store if need to make big batches?
If I made these in bulk. how would you suggest to preserve them for later use?
Just put them in between sheets of parchment paper and store in an air tight container and they keep really well!
thanks :)
But, I also can try in a pan?🤔
Can I spread it on baking sheets if I don’t have silicone ones ?
It's gonna stick..idk if you oil spray the pan would it release or not
can you do this on parchment?
Yes
Ur a badass! Keep up the vids pls!
Do you think I can use baking paper?? I want to try it, but I don't have a silicone mat :-(
You likely can, just might take a while as it will probably be difficult to spread but it should work!
@@ChefStudioChannel well you can boil the Glucose and pour it on the parchment I do it everyday at work lol
Can you store them for longer use?
Yes atleast a couple months, even in a fair tight container if you layer baking paper inbetween so sugar doesn't stick
Do you think I can try this using corn syrup instead of glucose?
Hey Azinta! Unfortunately you can't use corn syrup instead. I've tried and it kind of just evaporates lol.
Muy bonito pero si fuera en español o sub titulos me ayudara mucho por favor gracias
is it sticky???
can I use corn syrup? thanks
Hi! Thanks for your question. Unfortunately not. Corn syrup has a lot more water and doesn’t work the same way when baked like this! Hope this helps :)
Isn't frying it just so much faster, easier, and you can have thinner crispier result?
how can I make it into round shape?
Get a round cake mould without the bottom peace, cling film around the mould so the glucose doesn't pour out? Heat up the glucose in a pan until liquid and pour it in
🥰🥰🥰🥰
How about sugar. I wonder rif it works with plain sugar.
It does
@@BROWNSTALLION1000 how do you make it with plain sugar ? Pls help me out since i cant get glucose around here ;(
Is it 300 degree Celsius or Fahrenheit?
300F :)
Can I use parchment paper instead of silpat? I don't have any
Yep!
En español
Mine literally takes about 5 mins to bake at 300 degrees! 🤔
Can you add flavor
Yes boil the glucose until it turns to a liquid texture and add your flavour just before pouring it on the baking paper or silk pat
300? C or F????
180c for 5 min but just look through the oven glass until your happy with the colour
perfect trypophobia
Word of caution.. if it's thick, it can cut ur lips/tongue...
trypophobia
Trypophobia 😡
made this after watching this video, slightly dissappointed, the glucose tuile looks cool but has no flavor and gets caught in your teeth in the least desirable way.
