- This is the Raw feed uploaded directly with out any editing, The chef was excellent and made the fried rice for 16 people in less than 5 minutes.
He Scrambled more than a Dozen Eggs added Onions, Green Chilies and Cabbage, then comes the Chicken with nice flour coating added good amount of Boneless Chicken, He then added Rice and Stirred it with adding White Pepper, Salt, Curry leaves and Chilli Powder.

There is no broth anywhere in this stall.
The water he dips his hands in is cleaning water... Used to clean his hands after he touches the ingredients and the spatula(?) He uses to prepare different foods, since he prepares so many things a day, by the end of the night it turns into looking like broth...
They clean everyday, but due to the workload, it ends up looking like this by the end... They will clean up and then close... All busy restaurants are like this by the end... They cannot realistically make and serve food to so many people under 20 minutes...

To all those cleanliness Nazis . It's street food, hear me, STREET FOOD. You have no bloody idea how many are waiting for their food to be served. Probably it's just a little counter and two cooks working to feed 50 people at a time. Yes, that's the entire shop. You think they'll have enough time to clean the counter after every dish? To me it's clean enough. And they do clean the counter when the shop closes, after working for like some 12 crazy hours a day, non - stop.

He told me that the street food is 10x better than the food he got in restaurants in that same area . Is it true , since ive never been there . The only experience I have with indian food is my local Indian restaurant in our neighbourhood .

+mattgotsskill, actually I had been cooking on gas ranges for 20 years then I moved and I'm cooking now on a glass top electric range. If you get a glass top electric range with "speed heat" burners like mine then you can boil water in half the time than a gas range. And my gas range was the professional series. Not commercial gas range as in restaurants but professional home gas ranges. If I could have my wish then I would have both speed heat electronic burners and gas burners on the same stove. Also, I'm not talking about those induction electric ranges but glass top ones.

And you should know that regulated street food stalls in the Philippines follow sanitary measures imposed by the government. If they don't then there's a sanction for them. So yeah, hygiene matters for street food too. Just so you know.
