Cris Griffin restorations were being done before power tools. The blade was split open and chipped at the edge, perms a toy ruining it. This is about as good a restoration as you were going to get without reshaping the blade.
I'm not knocking his work, it's good and he puts a lot of graft in, but Is it really that impressive? Because I can't imagine it's particularly fun, plus it seems like a huge waste of time. At least he used a polishing wheel, I guess. If he finds it fun doing it this way, fair enough, but this is torture from my perspective.

Truly a breath of fresh air, no, a long tall glass of ice cold water. I cant begin to tell you how much it warms my heart to not only see the abused instrument return from its rusty grave to literally shine again, but more importantly to see and hear (i could practically smell) the traditional tools effectively yet gently exacting their influence upon the neglected steel. As i began to notice that you had intentionally abandoned the use of power tools for this project and the video i felt the pride you must have swelled up with coming over me, knowing that it took discipline to muscle the file through the rusty cocoon years had wrapped around your orphaned quarry. And knowing that at any point you could have been a lesser man and employed an electrical machine to do your dirty work for you. But you did not. ahhhhh. In this moment i am happy, happy!
I actually searched for this. I am restoring a similar cleaver that was given to me by the owner of an antique shop here in Hawaii. This guys blade is 4x more rusty as mine (my rosewood handle is in good shape) and I am using a powered belt/ disc sander. So far I spent 1 hour on it and just need to get the rust pits out. I commend him on his perseverance and patience. It totally encourages me to finish and look for a carbon steel 8” kitchen knife. Forget the stainless steel knives, (which are hard to sharpen/polishand therefore don’t hold an edge).

hmm i think a power grinder chould make the metal too hot on a single point if you not carefull enough and its really easy to cut off too much. so yes, if you have time and you want it so be real clean, use your hand tools
Personally, I would have rather they had just cleaned up the knife and add a new edge. That knife was used for one purpose only for most of its life before it was thrown away. That mushroomed spine and dip in the back was there for a reason and told any number of stories of creation before it was discarded. I feel like this is doing it an injustice.
I was so shocked at how wonderful it came out looking. With the pitting in it and the chipped edge I never thought it would come out so great! Wonderful job!
