Antique Rusty Cleaver Restoration

- Paid two bucks at a local flea market for this old, rusty cleaver. It did not look like much and hat a lot of rust pitting on one side, the handle was ruined and had severe blow marks on the spine. The seller seemed surprised I took it.
As you can see in the video, as soon as I took the first layer of rust out, the makers mark became visible. It is made by an old German company named DANKRE, that specialized in kitchen cutlery.
After all the rust was removed, it became visible that the cleaver was made from two different types of steel, one hard for the cutting edge and one softer for the main body and spine, so it can better take shocks.

Currently restoring a 100 year old cleaver of my own and was looking for ideas. While my cleaver is nothing like yours i just gotta say thats some nice craftsmanship you got there. I spent a few hours today welding my pits full and grinding them back smooth, hopefully tomorrow i can get it finished up and then its time to make it pretty and put a handle together with walnut. Thanks for the motivation!

Guy pretty much just used his lathe for everything. You can get a good used lathe for a few hundred bucks. As long as your planning to repair at least 1-200 meat cleavers you'll break even

I'm thinking probably not. I'm sure the cleaver wasn't pitted when it was brand new, and the purpose of a restoration isn't to add more pitting, its to restore how an item looked when it was new. He changed the shape of the cleaver, and the handle. This wasn't a restoration, more like a refurbishment.

By altering the cleaver it lost it’s originality. It is a fact that antique items loose value if handled. The procedure shown is the worst way of mutilation. Ask any museum, they will agree with me.
This is a good example of “how to make something old look like new again”.
There is no way I want anything but a smooth easy to clean and easy-to-keep-clean handle on my cleaver. B+ on the work and the video.

Very impressive work and video. It just so happens that I have an old cleaver (home made possibly) and the same JET lathe. This video made me realize several things. First of which, is I should restore that old cleaver. I also like the trick with the wire to burn in the lines.

Easier to let it soak in vinegar/salt solution. Then scub it with a brillo pad. Most folks have all 3 in the kitchen. Cost to restore $0-$6.

It would cost much more money and be a way bigger waste of supplies

Everything looks amazing! The one thing I would change "as a butcher" is the handle. The handle needs to be squared instead of round. The reason being blood makes the cleaver rotate in hand with it being round. Still very impressed!

@@Aayaninho Actually, that equipment is over $3,000, not all carpenters have the equipment he has. It's very expensive equipment that now many carpenters have (most have 1 or 2 of the things he has). In conclusion, this is very expensive equipment.

This was a simple rust removing job. First, that useful cleaver was dipped in vinegar twice, then there was some use of the wire brush to finish off the brown stuff that was eroding the cleaver's usability, then like cutting a piece of steak cake, because steaks are delicious and cakes are fun to eat, there was no doubt that sanding was involved in the complete silvering of the cleaver, then a piece of wood was sawed so many times it warranted a woodturning treatment, burn treatment and the preservation grease to make an ergonomic handle, then the handle was glued straight to the blade and the pointy end where the handle is suppose to go. There's so many ways to restore a culinary blade but yours is among one of the best methods of knife restoration.
A job well done and the steaks will be well done :D.
