This is a very satisfying process to watch! Many restoration channels show items restored to better-then-new condition, and they have their place. But most of us, confronted with returning this noodle maker to original condition, would do it this way-no sandblaster, no lathe, just simple tools and techniques. Congratulations on a job well done. The cookery section was an unexpected bonus.

About as perfect as can be. Wonderful job on the restoration with great results. The ramen bowl could not have looked better. It must have tasted wonderful. Labor intensive? Wow. (and that was just for the ramen bowl.)

I really appreciate the fact that this person restored this machine without the benefit of a sandblaster, powder coating oven or any of the other myriad of tools one would usually use when doing restoration, it makes what they did more impressive, and not only did they demonstrate the item making some noodles, they made a whole damn meal. Well done👏👏👏.
Everything is wobbly, things don't have tight fit, good job but room for improvement. But great job well done, I've done restoration, fingers it is very difficult.

An odd combination of quality and not so quality parts. Why not use brass spacers rather than wood? And why use two nails driven into the ends of a wooden roller? Wonder why the manufacturer didn't continue the quality all the way through. Loved watching your restoration. I was hoping to see some noodles being made on it and you did not disappoint. Just as I savored every task in the restoration of the noodle press, I savored every step of your ramen. I could smell the soup, taste the broth, appreciate the sear on the pork cutlets, and feel the texture of the noodles. Very satisfying meal. ありがとうございました

田中式って何やねん…って思って調べたら、製麺機には小野式、田中式、日本式の三種類があるそうです。
一番の驚きは、それらの知識が載っているページを書いたのが、家庭用製麺機マニアとかいう特殊すぎる人だったということでした。
実は三種類どころではないんです笑
一番人気が小野式と田中式ですが、宝田式やセブン式、永井式などたくさんあります。しかし未だに発見されてない製麺機がたくさんあるようです。
おそらくご覧になったHPの筆者が製麺機ブームの火付け役なのですが、その影響か、純製品にはない型番の替え刃やステンレス製のローラー・替刃などを生産してる一般のかたが何名かいらっしゃいます。

途中、かんすい入れないで麺を作って失敗して、でもちゃんと調べてやり直して成功するところ、とっても好き。
あれは麺作りの失敗ではなく、捨て生地を使ってレストアした製麺機を馴らしてる作業だと思いますよ
捨てる生地を機械に通して、付着している目に見えないような細かなホコリやゴミなどを取り除いたりするのです
