  • How To Make A Delicious Dairy-Free Potato Bake
    The moment I created this potato bake with my friend Courtney was an epic moment of pure genius! It was actually Courtney's mum, Heather, who inspired us to give this recipe a try. Courtney always talks about her mum's famous potato and I just felt so tempted to try this recipe.
    .
    Well, I'll just say this - when it was ready, we could hardly let it cool down, so we ate immediately, and even though it was burning our mouths, we enjoyed every single bite. The real star of the dish is cashew cream. It's wonderful how savoury this dish gets thanks to a simple mixture of cashews and water.
    .
    There is one trick that I learned from Heather. She taught me to push the veggies down so that they are all covered in juices. The magic happens when the veggies soak up all these wonderful flavours. Go now, give this recipe a try and I hope you will love it as much as I do.
    𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
    10 unpeeled small potatoes, thinly sliced
    15 large mushrooms, thinly sliced
    1 onion, thinly sliced
    3- 5 garlic cloves, roughly chopped
    1 red capsicum, julienned
    1 red chili, deseeded and finely diced
    2 cups, cashews
    2 1/2 cups, water ( add a little more if needed)
    1 tablespoon, paprika
    1/2 teaspoon, salt
    1/2 teaspoon, pepper
    1 tablespoon #GRATITUDE
    𝗠𝗘𝗧𝗛𝗢𝗗
    Preheat your oven to 170C. Have a baking tray ready to go.
    Combine the cashews and water in a blender and blend until completely smooth and creamy.
    Mix all the ingredients along with the cashew cream in a large mixing bowl.
    Season with salt and pepper.
    Transfer this mix to a baking tray.
    Sprinkle with extra paprika on top.
    Cover with foil and bake 45 minutes to 1 hour, until fork-tender.
    Let rest for 8 minutes and serve.

    Cooking time 45-55 minutes

    Since having to go gluten and dairy free in 2007, my husband hasn't always been on board with some of the dishes I have to make. This was sooo creamy and gooey, he asked me "Did you use real cream in this?" I just smiled... Thanks for all of your lovely recipes! 😋

    Wow, I've been trying to create a dairy free potato bake that people would not guess it's dairy free and I I just made your recipes and WOW, just wow. My husband loved it too. So amazingly delicious and it tasted even better then normal potato bake without feeling heavy and greasy after 🥰🥰🥰🥰

    Tried this tonight - maiden voyage for my new/used VitaMix - got cashew cream all over my cabinets before I realized the mixer would power it to the moon if I let it! Lol!! But only lost a few tablespoons of “goodness.” It’s in the oven now and I can’t wait to try it. It tasted excellent raw (after seasoning the cashew cream with garlic and the spices), so I think it’s going to be quite delicious!

    wow awesome recipe :) made a huge try full last night and you were right... we couldn't stop eating it ! I noticed mine went a bit crunchy around the edges/corners like yours, we were fighting over those little bits stuck to the side :) made me think could you take the foil off earlier and just give it a few minutes to crisp up on the top or would it just dry out ?

    How long did it cook in order to have nice soft potatoes? 170 degrees is barely even a warm oven, so did it take many hours? We always have a hard time getting the potatoes soft even after 2 hours in a 350 degree oven. I can't imagine a 170 degree oven!

      Hello Judy, I covered it with foil so the potatoes cook quicker and bake 45 minutes to 1 hour, until fork-tender. x

    Regards to your potatoes, in your recipe, you mention small potatoes to use, in your bowl in your video, it looks like medium size potatoes, what is small to you, are you talking about those baby tiny potatoes for small potatoes or medium size, maybe you can let me know as l will make this recipe again.

      Hmmm not the baby potatoes, it's different. It really depends as every potatoes are different. Small potatoes I guess are called regular in some stores or market

    I made this last night and followed the recipe. The video did not show the addition of the onion or the red chili but I added anyway. I loved the consistency of the finished product but found it a little bland. I will definitely make again but add some zip.

      Hi I don’t do low fodmap recipes and you can use Sunflower seeds as long as you soak them first for a couple of hours to get rid of the earthy flavor.

    We are anaphylatic to all nuts. What can we use as a substitute? Most gf and df recipes contain nuts, chickpeas, eggs which we are all anaphylatic to

    Beside some minor details, this is how used to make a Swedish potato bake (janssons frestelse) every Christmas for our patrons and family. I personally like to broil it at the end to get a crispy top and if you’re really decadent add cheese before broiling.

    Hi Chef, I'm obsessed with all your recipes!! I noticed you use cashew and coconut a lot which is awesome but very pricey here in South Africa - Cape Town, a kilo cashews is over R200 and a can of coconut milk is almost R30, the coconuts I've seen here do not look as yummy as yours, almonds are just under R200, so it will be quite costly to incorporate daily, what alternatives do you advise or how much can a family of 3 eat on 1 dish?

      HI Iliva, Great question... my thoughts would be to not eat those things daily. Take some time and work out a meal plan for your family, my suggestion would be to use the things that are readily available to you.

      I'm not sure.. i'd sugest you try it and let me know how you go. You will need to cook it less and keep checking it until it's nice and brown..

    It is frustrating when most of the dairyfree recipes use nuts. Cashews are very expensive where I live and for the allergic persons it is a no-no.

      You can buy low GI potatoes.they have less carbs.
      In Australia they are called charisma potatoes or spud lites or just use baby potatoes but make sure that you’re serving is about 45 g of carbohydrate with your half plate of vegetables and serve of protein. I follow a NSWhealth low Gi diabetic diet, not keto so it allows for 3x45 g of carb exchanges per main meal and 2x20g of carbs for two daily snacks (this is different from person to person and your Endocronologist and dietitian can work out your allowances [macros]).

      Probably didn't use a Vitamix or any other high-speed blender, otherwise, that wouldn't have happened!
