- This is the best tres leches! The cake is so light, spongy, soft, and moist. The whipped cream is perfectly light and sweet. And I love the vanilla and cinnamon flavor. You have to make this at home!

Tres Leches Cake Recipe
Ingredients:
Cake Batter:
Eggs: 5
Granulated Sugar: 2/3 cup (134g)
All-Purpose Flour: 1 cup (120g)
Baking Powder: 1/2 teaspoon
Salt: 1/4 teaspoon
Milk: 1 cup (240ml)
Vanilla Extract: 1 tablespoon (15ml)
Milk Mixture:
Evaporated Milk: 1 (12 oz) can
Sweetened Condensed Milk: 1 (14 oz) can
Heavy Cream: 1/3 cup (80ml)
Vanilla Extract: 1 teaspoon (5ml)
Whipped Cream:
Heavy Whipping Cream: 2 cups (480ml)
Powdered Sugar: 1/2 cup (60g), sifted
Topping:
Cinnamon: for garnish
Fresh Strawberries: for garnish (optional)
Directions:
The cake:
1. Preheat Oven and Prepare Cake Batter: Preheat the oven to 350°F (175°C). Grease and flour two 8x8 inch baking pans.
2. Separate the egg yolks and whites into two bowls. Set aside.
3. In a mixing bowl, sift together the flour, baking powder, and salt. Set aside.
4. Prepare Egg Yolk Mixture: Beat the egg yolks and granulated sugar together until fluffy and pale in color.
5. Stir in the milk and vanilla extract until well combined.
6. Beat Egg Whites: In a separate clean bowl, beat the egg whites until foamy.
7. Gradually add 1/3 cup of granulated sugar and continue beating until medium peaks form.
8. Combine Wet and Dry Ingredients: Gently fold the dry ingredients into the egg yolk mixture until just combined. Carefully fold in the beaten egg whites until no streaks remain.
9. Bake the Cake: Divide the batter evenly between the prepared baking pans. Bake for 28 to 35 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely in the pans.

11. Prepare Milk Mixture:In a mixing bowl, whisk together the evaporated milk, sweetened condensed milk, heavy cream, and vanilla extract until well combined. Refrigerate until ready to use.
12. Assemble the Cake: Once the cakes are cooled, use a fork to poke holes all over the surface of both cakes. Slowly pour the milk mixture over the cakes, allowing them to absorb the liquid.
13. Make Whipped Cream: In a chilled mixing bowl, beat the heavy whipping cream and powdered sugar until soft peaks form.
14. Decorate the Cake: Spread the whipped cream evenly over the top of each cake. Sprinkle cinnamon on top for garnish. Optionally, garnish with fresh strawberries.
15. Serve: Chill the cakes in the refrigerator for at least 1 hour before serving. Slice and serve chilled. Enjoy the deliciously moist Tres Leches Cake!

It did end up being more work than I thought it would, but besides beating the eggs, it is easy and I think it’s worth it! :)
