Thanks so much for posting this recipe. I've cooked it twice now, and on the second attempt I'd mastered it. Chicken was spot for colour, crispness and taste. Achieved a lovely white chicken interior and also got the sauce bang on for consistency and flavour. I found using a minute timer for the first fry for each side worked well for me after following instructions on the oil heat and using a piece of cornflour, making sure it sizzled and floated before adding the chicken. Ideally you want the chicken up to room temperature after removing from the fridge otherwise it will be too cold to place in a boiling hot pan straight away and might affect taste of the chicken. 10/10 for a lovely family meal !
I hope noone followed their advice, you should not have chicken reach room temperature what you should do is soak chicken in a marinade or water so the water steams out of the chicken when frying to leave it extra moist and tender

I just made this for dinner tonight. The dredging of the meat with cornstarch looked easy but this process took some time. Prob cos I cut the chicken smaller hence more dredging work required. Also Roland, the chicken took a much longer time to fry n the first batch turned out soggy. It only became crispier n frying time shortened when I turned the heat to high. So the med heat instruction given didn’t work for my stove. I didn’t hv regular honey and used fermented honey with a vinegary taste n turned out pretty good. It gave it a tangy flavour in addition to the sweetness. My family loved it. This recipe is a keeper but I would give myself a longer prep time in future. Novice 🧑🍳
Hi, I tried this for lunch today and it was absolutely delicious - the chicken was crisp with every bite and it was balanced well with the tanginess of the tomato ketchup and the sweetness of the honey. I had to close my eyes a few times as I tried the chicken as it was just too good and I thought I was in a restaurant for a moment!!!

Hi Lisa, the reason why the chicken is fried twice is to let the chicken retain its crispiness longer so that when the gravy gets in contact with the chicken, it will still remain crispy. Happy cooking.

I am making this tonight and was wondering if rice wine work as a substitute for chinese wine? Also, dies it have to be regular sesame oil or can you use a any type of sesame oil?
Hi Vincent! Good morning from Singapore. Rice wine is not a good substitute for Chinese cooking wine unfortunately so if you don’t have Chinese cooking wine, it’s ok. Just omit it. May I know what kind of sesame oil are you using? I believe our sesame oil should be regular type used frequently in Chinese cooking. Sorry we don’t know there are other types of sesame oil cos it’s not commonly sold in Singapore. Hope this helps. Happy cooking!
Hi Vincent. Toasted sesame oil or mei wei style is fine. Basically Mei wei is a blend of soy beans and sesame oil. Toasted is more recommended though. Hope this helps. Happy cooking!

I have made a similar recipe with bone-in thighs but your recipe is easier and I do add sugar and honey whatever is in the pantry. Both works for me fine. Happiness!

Hi Matt. From what we know, cornflour’s other name is cornstarch - British English vs American English. In terms of colour, the cornflour we have in Singapore is probably very processed compared to where you are. In short, you can use cornstarch. Happy cooking!

Hihi Kay, you can air fry them for about 10 mins at 130C and then 5 mins at 180C. Please adjust the timing accordingly if you think the chicken doesn't look cooked. Happy cooking!

Hi Lisa, the reason why the chicken is fried twice is to let the chicken retain its crispiness longer so that when the gravy gets in contact with the chicken, it will still remain crispy. Happy cooking.

Ive been craving honey chicken for soooo long now due to lockdown. I just made this for dinner and it was absolutely amazing. Before even mixing the chicken with the sauce, it was full of flavour!! I am making this tonight and was wondering if rice wine work as a substitute for chinese wine? Also, dies it have to be regular sesame oil or can you use a any type of sesame oil?
Hi Vincent! Good morning from Singapore. Rice wine is not a good substitute for Chinese cooking wine unfortunately so if you don’t have Chinese cooking wine, it’s ok. Just omit it. May I know what kind of sesame oil are you using? I believe our sesame oil should be regular type used frequently in Chinese cooking. Sorry we don’t know there are other types of sesame oil cos it’s not commonly sold in Singapore. Hope this helps. Happy cooking!
Spice N' Pans there are different types like hot chili oil, toasted sesame oil, Meiwei style etc.

Hi Almas. Light soya sauce is essential for this recipe. Worse comes to worst, you can use your dark soy sauce.

OMG! Yes, I to notice that you respond to practically every comment and I am heading out to purchase boneless thighs to make this particular recipe. I have made a similar recipe with bone-in thighs but your recipe is easier and I do add sugar and honey whatever is in the pantry. Both works for me fine. Happiness!

Hi Matt. From what we know, cornflour’s other name is cornstarch - British English vs American English. In terms of colour, the cornflour we have in Singapore is probably very processed compared to where you are. In short, you can use cornstarch. Happy cooking!

Hihi Kay, you can air fry them for about 10 mins at 130C and then 5 mins at 180C. Please adjust the timing accordingly if you think the chicken doesn't look cooked. Happy cooking!
