  • How To Make Rye and Dates Loaf Recipe (Vegan and Wheat Free)
    This is not really a scone. It's a wonderful Rye & Dates Loaf. I think my editors here in Bali thought it was. Cute they are. Anyhoo moving right along. I found this recipe to be super easy cause there was no kneading required. A few general tips here to remember. Make sure the coconut yogurt you're using is not sweetened or flavoured. The dates I used were a mix of dried and majool dates, why both? I ran out of majool and had a ton of dried ones on my shelf so I mixed it up with both. Allow it to cool before you cut it up, tho it is nice and warm. The maple and coconut yogurt is a MUST, drizzle when you go to have a slice.

    400g wholemeal rye flour
    1 cup almond meal
    1 tsp baking powder
    150g medjool dates, ripped into pieces
    1/3 cup coconut sugar
    1 cup coconut yogurt
    1 cup coconut milk
    1 tbsp lemon juice
    1 tsp baking soda
    𝗠𝗘𝗧𝗛𝗢𝗗
    Pre-heat your oven to 200C.
    Mix the rye flour, almond meal, baking powder, coconut sugar, and a pinch of salt.
    Add dates into the dry mix and put aside.
    In a separate bowl, mix the coconut milk, lemon juice, baking soda, and coconut yogurt. As you mix, it will bubble up a little and that’s what you want.
    Using a knife, mix the dates and the dry ingredients.
    Add the wet ingredients to the dry mix and continue to combine with a knife.
    Line a baking tray with baking paper.
    On a floured surface. gently bring the mix together and shape it to a long flat log.
    Transfer it to the tray.
    Pre-cut the loaf and sprinkle with flour.
    Bake the loaf for 20-25 mins, putting the tray in the upper part of your oven.
    Once it's ready, let it cool down.
    Serve with maple syrup or jam and coconut yogurt.

    Wo Cynthina, your date bread looks very good, l guess you can have it for breakfast eh for what l can see what you had put on top of those sliced bread, but l do have a question for you in regards to your
    " Medol Dates " , since you and l both know that those type of dates have seeds in them, isn't it easier to use normal dates without the seeds? Its alot of work peeling all those seeds out from the medol dates, and takes more time slicing those type of dates as apose to using seedless dates, you know what l mean?
    I always have to think logically what goes faster what doesn't take too much time, that is how l think, otherwise, your breakfast bread looks pretty yummy.

    I can't find coconut yogurt in my country. Could I use greek yogurt instead? It looks delicious.😃

    We have nut allergies. Can we sub the almond meal with another flour? We can have gluten so can we use plain flour as sub? Ta!

      I honestly havnt tried replacing it with another kind of flour but it may work. let me know when you tried it :)

      Maybe rice flour as is might keep the same structure/ density of the dough..? just less flexible/chewy as the almond i guess..?

      Hey Victoria, I used Almond meal and nope they are different. Almond meal is made from raw or unpeeled almonds and almond flour is from peeled almonds and has a finer texture and lighter color.
