MY EMERGENCY BREAD: 1 HOUR FROM START TO FINISH⎜OIL-FREE RYE BREAD

  • This bread was not only an emergency but an accident - with a pleasant ending I must add. I have started making bread and suddenly I realized that I was out of yeast! Oh, snap! But since I have had all the ingredients already mixed up I have decided to take the chance and add baking powder instead. And it worked wonders! They say that the best foods come from culinary accidents... Well, this is absolutely right!
    INGREDIENTS:
    3 cups of rye flour (or whole wheat flour)
    1/2 cup of oatmeal
    3 tablespoons of muscovado sugar or brown sugar
    2 tablespoons of ground flaxseed
    1 1/2 teaspoon salt
    1 1/2 tablespoon of baking powder
    2 teaspoons of baking soda
    1 tablespoon of apple cider vinegar
    3 tablespoons of coconut oil (optional)
    Water (about 1 1/2 cup)
    Seeds and oatmeal for sprinkling on top
    METHOD:
    Preheat the oven for 190℃ (400℉).
    Mix all the ingredients together. Be careful not to let the salt, apple cider vinegar, and baking soda be in direct contact with each other, it might compromise the bread raising.
    Put the bread in the oven's middle rack for 50 minutes to 1 hour. Remove from the oven and wait at least 30 minutes before serving it.

    here I have made Chef Jana's one hour emergency bread, I used white flour with a small amount of molasses as I have no rye flour.
    amazing, bread in an hour.

    In the UK we call this soda bread. It works fine with other flours.

    I just made this and ate my first slice. I find it a very versatile recipe. One could use a variety of flours, sugars, fats, and seasonings. I used half whole wheat and half white. I did not use any oats or flax but did add some coconut oil. I included some nutmeg. I did use buttermilk and no vinegar, but that wouldn't be needed. Water and vinegar should work fine, perhaps not quite as tasty. The results were outstanding. Fine tender crumb without being too dense and held together well. Flavor is excellent. That would have a lot to do with the quantity of sugars and fats. My loaf was plenty baked after 45 minutes at 400. I make soda bread often, and this is nothing like it. Different textured batter and finished product. I shall make this often with many variations probably adding dried fruit and chopped nuts from time to time. Move over, soda bread. Thank you, Jana.

      I used regular Gold Medal unbleached flour and i didn't have plain oatmeal so I used the only oatmeal in the house...apple instant packets of oatmeal and it came out deLish' ..... Its soft

    this is perfect, I've been looking for a quick bread and I have rye flour. I agree that this virus may be a blessing in disguise , people may remember what is important, like family and helping your neighbor

    Dear Chef Jana, I started watching you last week I just found you haphazardly on TH-cam and I just think that you are wonderful. Today I have watched a wonderful barbecue cauliflower recipe, the wonderful extremely good cottage cheese recipe and now this emergency bread. And I specially love that you are reaching out to us during quarantine and telling us to use what we have at home and say things like it will be OK and humans will be better after words. You’re not just a great chef you are a kind woman and I really love that about you. So here is what I have been Watching while I am stuck at home I am watching Miss Fisher’s murder mysteries on Amazon prime, which is based in Australia in the roaring 20s and it’s just a wonderful program. I am going to try this with white bread white bread , lol, I mean white flour, which is what I have at home right now and I will add some molasses to darken the bread. I will let you know how it turns out and I think your English is better than mine and I was born here. You’re just a breath of fresh air and your recipes are terrific. Best to,you. 😘⭐️🌺

    I didn’t have oats so I used organic soy flour, well everything was organic. I made it drier and shaped it into two loaves. They’re baking right now and smell delish.

    Jana, I'm using what I have too. I've always kept a well stocked pantry just for situations like this. The panic and hoarding are causing more problems than necessary. This too shall pass and hopefully people can be kind and look out for one another. Keeping things as positive as possible will help everyone get through this. This looks like a great recipe!     This recipe is amazing! Substituted date syrup for the sugar and added a quarter cup of caraway seeds.. The bread gets better with age. Just throw my breads into a big empty pot and put the lid on for stroage. Keeps fresh and tasty. Great bread for keeping one regular.

    I made this bread twice last week -- that is how amazing it is!!! It has a fantastic texture, terrific taste, and is super easy to make.
    Some minor tweaks that I've found useful: use yeast instead of baking soda and vinegar (like chef Jana suggested); add 1 Tbsp whole flaxseeds for texture and a rustic look; bake in a Dutch oven using the method from "Jenny Can Cook" (No-knead bread).
    Delicious!!!

    ...Jana y'all are a breath of fresh air...couldn't agree more-things go in cycles imho..they happen for a reason (not to diminish the severity of it all)...for me, it's all about perspective..you can choose to resist or choose to just show up each day with the best intentions possible and "breathe" through the fears...this slowing down brings up huge very real challenges but it's inevitable that big growth will make us stronger...trying this bread in the AM..ty and take care...best, Lindy

    been making something very similar during the self-quarantine, I went to the store and all the vegan/healthy breads were already gone, so I thought, screw it, I'm making my own, I realized I didn't have yeast, but I had a bunch of baking soda and baking powder, so that's how it is now :) also, I don't have an oven, I make little flatbread/roll type things in a crushed marble-coated flat pan

    I could almost smell that bread. I agree, we will all get through this. I have many books to read, lots of coffee and wine to drink, oh ya and food, hubby and I are all set with lots of hobbies. It all makes you appreciate things a little bit more.

    Good idea Jana I been making organic bread 🍞 all winter and still making it I still have yeast but this is a good idea if you don’t have yeast being self sufficient is important in hard times.Making your own bread 🍞 is so rewarding and nothing like store bought and you know what is in it

    I made it yesterday Jana! I used 1/2 Lupin high protein flour and 1/2 whole wheat flour. I only had 1 Tbsp of baking powder left, lol, but it worked! It is dense and tasty 😋👍🏻👍🏻

    Wow. As a Slavic-American, I have been very disappointed by my attempts to make a rye bread as good as one gets from a bakery. I'd settle for any kind of palatable rye bread, to be honest. Would never have thought to use chemical leaveners, so maybe this one will work for me. It looks like a nice smörgåsbord bread, something to slice and top with carrot lox and dill, or mushroom pâté and radish slices. Now I'm famished! Hope you and yours are well and staying safe; TFP!

    Hi Jana and TH-camrs!!! This looks delicious 🙂 I have Celiac's, so in addition to being vegan, I have to eat gluten free. I miss rye bread so much. and am going to attempt with a gluten-free flour. Wish me luck! Glad you're feeling better and thank you for your positivity in these trying times. The hoarding here in Connecticut is out of control 😣 I do believe we will come back stronger, I only hope the economy can, too.

    For lunch, this bread would be perfect served with a slice of your home-made "leverpostei" (paté) and pickles on top :-D. Rustic rye-bread with 'leverpostei' is a lunch-classic i Norway, which is also in a "lockdown" situation at the moment, and extravagant home-lunches are a growing trend...

    Thanks Jana! Can you explain why you use so much Sugar in your bread? I would have thought that one teaspoon would be enough.

      Sure, its to neutralize the strong baking powder/soda taste and to add flavors, mascavado sugar is very tasty and high in iron and vitamins. But you can omit if if you don't like it, of course ;)

    I agree it's an opportunity to be "better" on a personal level - although there are already some of us good folks around. Where I am afraid is about the political sphere. That is a catastrophe. I'm in Australia, and the bad decisions are everywhere, some worse than others :'(

    I made this bread today but with white whole wheat bread. Kids and I loved it! Only problem I came across was the top of it. It grew like a bump on one side that made it difficult to cut. Also, it crumbled when cut. What could've made that happen? The cup of water I used wasn't warm nor room temp does that matter?

      oi! na vdd, essa passagem que descrevi em inglês (espero que tenha sido claro no que escrevi) aconteceu há décadas atrás (95 ou 97 e acho que tu ainda era comissária de vô. acho que uma contemporânea tua foi a nossa tb vizinha letícia n) numa festa na casa do lucas (até onde sei era aniversário dele e do saulo tb) no parque. tua prima que mencionei é a larissa e nessa festa estava o pipo tb dentre muitas outras pessoas. conversei com o thiago na noite em que (me inscrevi e) escrevi no teu canal. a "cena" entre a larissa, tu e eu, eu tb não tenho nenhuma lembrança apenas relatos dos que presentes por lá. ainda assim, foi algo especial pra mim. rsrsrsrsrssr. até curti umas fotos tuas lá no instragram: uma que outra em que está (gata demais e) sozinha e mts em que aparecem teu pai, mãe (única que não recordo ter conhecido) e irmãos. enfim, eu era mais próximo do teu irmão e dos teus primos (glauber, larissa, pipo, aldinho e juliano) mas, infelizmente, não tanto de ti e da tua irmã. de qualquer forma, foi legal ter pego teu contato aqui no YT com teu estimado irmão - que espero estar recuperado do que lhe ocorreu. beijo!

      you can do it two ways: you miss everything, then the water then the apple cider vinegar and the salt afterwards. Or you do like I did, one each side of the bowl, then mist all together fast.

    A couple things. Which size pan? Oiled or not? My dough came out much thicker than yours. What are your gram measurements for the rye flour? Is in the oven now so not sure of the final result. Will update later.
