■ Cooking time: 15 minutes
■ Ingredients (for 2 people)
・Eggplant: 3 pieces (280g)
・a. Mirin: 1 tablespoon ・a. Sugar: 1 teaspoon ・a. Mentsuyu (three times concentrated): 1 tablespoon ・a.・a. Water: 150cc
・Salad oil: 2 teaspoons Topping ・Small green onion: 1 teaspoon ・White ground sesame: 1 teaspoon
■Preparation ・Scrape off the stem of the eggplant.
■ How to make
1. Cut the eggplant in half lengthwise, make a shallow grid-like cut in the skin and cut it into 4 equal parts. Soak in water for about 5 minutes and drain.
2. Mix seasoning (a) in a bowl.
3. Heat salad oil in a pan over medium heat and stir-fry the eggplant.
4. When the eggplant is coated with oil, add ② and bring to a boil. Cover with a drop lid and simmer over low heat for 10-15 minutes.
5. Arrange on a plate and top with ground white sesame seeds and green onions to complete.
