Always amazing when you upload a new video! I've been a vegan since May, which was a complete turnaround, as I worked as a butcher for 17 years. It was a jungle and a real eye-opener when I saw all the delicious recipes I can make as a vegan. I never realized how many creative, tasty options there are without animal products. It's been a rewarding journey, and I'm constantly discovering new dishes to try. Thank you for sharing such inspiring content!
I flipped my life at the end of April as well. Since I use eggs and milk every now and then, I haven't quite made it to vegan yet, but I'm on the right track. All the recipes are so full of flavor that I would never have imagined. I have never in my life (62) eaten as much vegetables and fruit as I have in the past 7 months. it's just fantastic.
I have loved to cook great food from scratch all of my life (male 67) and have always enjoyed cooking videos, but this is simply by far, one of the very best ever in my humble opinion! Simple yet elegant in every aspect. I may have said this once before, but these all are absolutely perfect introvert food prep videos:-) No over the top music or pot banging...You are a treasure Will, quiet, kind and passionate! Thank you so much for another soul satisfying recipe. You have such a large pool of great flavor combos inside your brain! I appreciate you sharing all of it with us. I do enjoy the blend of fruity/spicy with savory. The ginger makes the dish pop against the mango sweet and brings out those green onion flavors. Plus the sesame seeds at the end gives that great nutty hit in each bit. I'll bet the smoked tofu also works great here.

Watching you put this fusion of vegetables, tofu, rice, and not one, but two incredible sauces with the piano playing in the background and your soothing voice was very meditative first thing in the morning! I just checked your bio because I thought that with your calm demeanor you just might be in Canada and I was right. I don’t know what it is but I have other favorite channels whose hosts are in Canada. I wish I could go to Canada, things ain’t looking so good here in the coming days. That seasoning for crumbled tofu is brilliant; you get the sweet of the dark soy sauce, the spicy smoke of the chili oil so it's going to be like barbecue or bacon's savoriness. Broccolini is very savory as well. Nice dish.
Initially I thought how much flavor can a flavored oil add. I must admit, once I made it, it was worth the effort, it’s packed with host of flavors 😊 Thank you for insisting on the recipe in each video
Lay Ho Will! Big thank you again for this video. The sauces you mentioned at the end caught my attention. Had most ingredients except coriander but have a good veg shop around the corner so went to get some. Made the two sauces and we are enjoying them with snacks as dips! My partner and I agreed that for a very long time we hadn't had such delicious and healthy dips, the coriander one is so light, fresh and tasty! The kick of the lemon is fabulous with Nachos. And the mango one is so creamy and delicate one can eat it on its own! We tried both as a spread on bread, delicious. Both will become a standard to add them to warm dishes, as you mention in the video, and in sandwiches or dips. What a discovery. I feel I had a masterclass today, seriously, the flavour of the toppings will enhance many many warm dishes and salads in the future. Most grateful for this class in particular. Best wishes. 😍🤩💖

Wil, this looks like a great recipe I'll be able to make soon...because I've asked for Vitamix blender for Christmas & I'm soooo excited about all the possibilities it'll open up for me in the kitchen. One question, the mango & cilantro sauces look really good...how long do you think they'll last in the fridge? I just want to know because with fresh-made foods I'm uncertain..& I doubt they'll last long because they look really delicious, but it's nice to know since they're made from fresh ingredients with no preservatives. I think he said chickpeas in the video. As a non-vegetarian that loves Wil's recipes, I usually sub ground beef for the gound tofu he uses in recipes like this one.

Thank you for checking my fridge before making that video😉 Imagine yesterday morning I watched your video and then realized I had all the ingredients at home - well, even better, some coriander that was just good enough for the blender, but not yet gone bad, some left over broccoli and of course tofu. So we had it for lunch and it was very quick to make and tasted really good. (Only my husband didn't taste much because of the flu.) I'll have to remember the sauce, try the mango sauce to update my future fried rice.

I find that I have to steam/boil carrots a little, or they will be too crunchy from stir-frying alone.
I usually just chop them smaller for stirfrys like this, almost like garlic.
Finally someone like me .. I think they undercook their food on TH-cam just to look more colourful for the camera 🙈
Or you can fry them before the other vegetables..I always do that
