I just made the gochujang rice (1st recipe) and I didn't have mirin and korean chili flakes or tomato paste so I just substituted with regular chili flakes and tomato paste. I also used lettuce but OMG!!!!! The salad tasted so good I couldn't believe it. The entire food was delicious!! Thank you so much! Love from Nigeria 🇳🇬 ❤️

I've gotten so into Korean cooking in the past few years. I probably eat it at least twice a week. I do all my own cooking, but as I live in the American midwest a lot of standard ingredients are just not to be found anywhere. So I do a lot of substitions. But these recipes still work. I operate with always the back of my mind Aaron saying "don't worry about it." I do not. And I get some awesome food at the end of things.

I made the chicken rice bowl tonight but decided to use ground pork instead. It was good but so filling! I also made some zuchinni, and I made the salad with cucumber. The pork was really rich. I’m wondering if the chicken would be less rich. Overall it was really good and pretty simple to make! Thanks!

I can't have gochuchang for a month or so, since I just had surgery. No spicy food for me, so doenjang is perfect for me! Plus, I need lots of protein, so pork belly is ideal. 🙂

Korean food has always been my absolute favorite type of food, but I was overwhelmed thinking that it would be so hard to make in my own kitchen...I didn't want to mess it up and disgrace the traditional Korean style! But Aaron makes cooking this delicious food SO EASY! The step by step instructions with precise measurements and helpful visuals are so easy to follow and my dishes always come out AWESOME! Plus, his side comments are really funny and make these videos so fun and immersive. Claire is like the beautiful cherry on top of each recipe, with her cute excitement over each dish, and watching her eat is like a mukbang from Heaven! What can I use instead of Mirin?
Except for Japanese cooking where mirin is crucial for flavor, you can replace it with water with a tiny amount of sugar or just skip it. Still gonna be good. Don’t worry! 😊
I cannot find mild red and green chili peppers in the US that look like that. Unless you want to count jalapenos or serranos in that category. What is the name of the "mild" peppers you are using?
Any substitutes for mirin as I dont have alcohol
If it’s not Japanese food, you can still make it delicious without mirin. Just add the same amount of water. That should be alright! 😁

Can corn syrup be omitted or replaced?
Except for Korean fried chicken where the recipe calls for a lot of corn syrup, you can replace it with honey or add more sugar. Still gonna be good, don’t worry! 😊

Is the Korean soybean paste very different from miso?
Compared to doenjang (Korean soybean paste), miso is lighter and it’s on the sweeter side. 😊

You can substitute with other cooking wines such as mirin(Japanese cooking wine), dry sherry, etc. Even a splash of water would help, too, so don’t worry! 😊

It’s simple, a tablespoon is half an ounce (en.m.wikipedia.org/wiki/Ounce). Which one? Oh, just pick whichever one you want as long as it’s fluid (seriously it is a US customary fluid ounce, but an imperial fluid ounce is close enough that it doesn’t matter).
Traditional units of measurement feel a bit crazy compared to the spare elegance of the metric system. But there is an undeniable convenience from the way they use half and one third multipliers. Switching to metric for weights has been an easy, I haven’t looked back. But for volume, the “standard” rigmarole feels easier to work with once you’ve memorized the ratios (1 oz = 2 Tbsp = 6 tsp). Each unit is basically half the level above (with a couple exceptions).
In sane units:
A teaspoon is about 5 ml.
A Tbsp is about 15 ml.
A fluid ounce is about 30 ml.
A cup is about 240 (or 250) ml.
A pint is about 500ml.
A quart is about a liter.
