    Braised Herbal Duck w/ Sea Cucumber Recipe 药材海参鸭
    Ingredients:
    Serves 6 -8 pax

    50g (1.76oz) rock sugar
    1.65kg (58.2oz) duck
    200ml (6.76 fl oz) Chinese white rice wine
    5 tablespoons premium dark soy sauce
    3 tablespoons oyster sauce
    2 tablespoons light soy sauce
    2 teaspoons salt
    50g (1.76oz) galangal root (blue ginger)
    50g (1.76oz) young ginger
    10cm long (4 inches) cinnamon stick
    1 star anise
    10g (0.35oz) Angelica root (Dang Gui)
    Enough water to cover the duck
    10 Chinese dried mushrooms (rehydrated)
    600g (21.2oz) sea cucumber
    40g (1.41oz) sliced carrots
    40g (1.41oz) sweet peas
    Some cornstarch solution
    Some blanched broccoli as garnishing

    I cooked this with 4 duck legs (drumsticks). Didn't have sea cucumbers on hand. Followed exactly the steps and ingredients. It was SOOOOOO GOOOOOD! Leftover 2 legs. The next day it was even better! Husband was pleasantly delighted with this dish as he used to eat it when young. For unknown reasons this dish disappeared even from teochew restaurants. I didn't do the slurry for the gravy and used the balance as a noodles base. Nothing was wasted. Husband says the gravy was perfect for the noodles 😊 absolute satisfaction! 😋

      Hi Mona. Try not to because Chinese cooking wine turns slightly sourish after long cooking. Get a bottle of white rice wine. Cheap and good. Happy cooking!

      Hi Jan! Good morning from Singapore. Sea cucumber is actually tasteless and it absorbs the sauce in which it's cooked in but I suspect that you may not like it because of the texture. But if you feel adventurous, you can get them from Amazon :)))

    This dish looks exceptionally delicious. I can’t get a hold of rock sugar. Can I substitute with brown sugar with the same amount?

      Hihi. Yes you can use normal white sugar. Same weight. You’ll need to caramelise the sugar. Brown sugar can also be used. Happy cooking!

      Hi Lian Hiang. It's more convenient for us and the prep work is lesser but dried sea cucumber has a firmer bite to it. It really depends on what you like. Hope this helps.
