Don't throw away your cake scraps! You can make cake pops with them.
For all of you who are asking about Self-Raising Flour and can't get hold of any wherever you are, you can improvise by adding 2 level teaspoons of baking powder to every 1 cup of plain flour (around 150g). Hope this helps!
i don't know whats wrong with the cake i've made, i divide into 3 and follow the exact same amount of the recipe. But, before 25 minute the cake was burning and overly puff out and undercook in the inside. So, i cook it for more 15 minute, and the taste was not to lemony for me. Maybe i should give some lemon extract?
Get an oven thermometer and make sure your oven is functioning properly because it sound to me like it's too hot. The temperatures I recommend are for fan-assisted ovens. If you find your oven is too hot in reality, drop the temperature by 5 degrees or so and see how you get on. x

I love her videos because she always points out the little things that make the difference between a good cupcake/cake and an excellent one. Like adding the eggs one by one or not mixing the sugar/butter too fast at the beginning.

Always use unsalted butter, unless the recipe specifies what kind to use.

For interest sake, if you halve the recipe and bake as cupcakes, it makes 22 cupcakes, and you can bake it at 170C for about 12-15 minutes.

All done, and it is FANTASTIC! The tart lemon curd balances the sweet buttercream, the cakes are light and tender, and the marshmallow meringue is super cool. All together it truly is a lemon meringue pie with cake instead of crust. Personally I still love my lemon pie, because I love pastry, but this was a great cake, which me and mum made for my birthday today, so yay! Super happy, thanks for the great recipe! ^•^

I made it and it was just AMAZING!
just for an update...cake turned out delicious. I did do the cake one day ahead, minus the icing, and maybe its the way i wrapped it, maybe not but it did dry up just a little. The lemon curd was absolutely decadent. i thought the lemon butter would be too sweet but it blended well with the curd and frankly, the meringue icing was truely a beautiful touch. ps....i loved using the blow torch! thanks Jemma!

I forget to mention that I made also this as cupcake.I put Lemon curd as filling and lemon buttercream and the marshmallow top of it..all my husband colleageus found that really surprising flavour (beyond expectation) because when the first time they saw, it would be so sweet but nog. They loved it.
