Thought that this was going to be the same as the Earl Grey Breakfast Cupcake she made before, but turns out this is a much more tea-based variant! Jemma's recipes are always so innovative, I love it!

The different texture layers must have made a delicious combination. Thanks for sharing Jemma. And when you can make another video showing a cupcake those cut in half for us to see how it was.
one of the technique i've used for quite a long time is to steam your food using highly concentrated red+black tea (i've done that since i was a little boy), it's light, aromatic and gives the most amazing amber colour to ur food (if u ask why i don't put the tea straight into my food, because when u brew a tea, if u don't brew it properly it can give a slight bitter taste which in some cases tends to be undesirable ^^)
well, one of my favorites is to steam both sweet and savory custards (just like creme brulee, creme caramel and pot de creme, or steamed chicken custard also tastes brilliant with this) doing it bain marie way, won't really work, as the aromatic steam will escape and won't be absorbed by the custards, so steaming is the way to go (u can also do the very same technique using coarsely ground coffee)
Your cupcakes are always so wonderful ! I have a little question about the sugar. I don't use white sugar anymore in my cooking, would muscovado (or any other raw sugar) make a big difference in the batter or final cupcake ?
+Audrey B Indeed it would, we would recommend using a Light Muscovado sugar. It's great sugar to use in cakes as well as soft chewy cookies and puddings.

At least you don't tell people your recipes are sooooooooooo easy. Your cooking looks scrummy. I hope you are not sharing difficult recipes to make yourself look "smart". I was a special ed teacher for a long time. I know what it means to people to have success. I get a little wound when children and adults are set up to fail. I am sure you mean well.
