Hello - if ube halaya is not available, you can leave it out and just rely on the ube extract for the ube flavor in the cake - the majority of the ube flavor in this cake comes from the concentrated ube flavor in the ube extract. Ube powder can be used as a substitute for ube halaya if ube halaya is not available - by reconstituting the ube powder in hot water (per packet instructions) making a paste, and adding 1/4 a cup of that paste to the cheesecake batter just like with the ube halaya. Hope this helps! :)
