I literally went back to San Sebastian again 2 years later because of this cheesecake. It's my absolute favourite, I highly recommend making it!

I have family from the Basque region too! My grandmother was born in Puerto Rico and her parents were from Spain. My great grandfather was from Northern Spain and my great grandmother was from the Basque region. ❤️ love your baking! I've made lots of your recipes and they've never steered me wrong!
Just an obsevation, Cream cheese from the fridge in the stand mixer on low breaks down a bit but if you add the sugar it come smooth and silky, then I just add the rest of the ingredients as you mention and all comes out lovely. I often forget to take the cheese out of the fridge in time but this works for all my cheese cake recipes as long as the cheese meats the sugar first all is well.
All of your videos are so well done and informative, you truly cover everything someone would want to know and even things the viewer didn't know they needed to know. I greatly appreciate all the hard work and effort you and your team put into these videos.

I’m basque too hehe I’ve never actually called this a basque cheescake! In my area the popular “Basque cake” is no cheescake at all and looks quite different to this one, but this one is awesome too!!
@@gatosandwichera 😀 how does the one in your area look/taste like? Very curious! the ones I have tried looked like this one in colour/texture and that sort of rustic look. But they weren't that thick, maybe half the height of this one? I haven't had one in years but I remember they were delicious and definitely had that cheesecakey taste.
@@Rockmanticist it's more like a pie, with crust and all that, and it usually has some basque motifs like a lauburu done with more crust. In the inside it's usually all pastry cream. It's delicious!!

If you let your cream cheese or butter get to room temp on your stone countertop it will still be cold! Place on a plate or wooden board! This looks great!

This looks awesome. Refrigerating is the way to go. Many recipes will say to serve it slightly warm. I tried that and it was ok, but... We refrigerated the left overs and it was AMAZING the next day. Like, twice as good.

This is the cheesecake my local artisan bakery in Berkeley has a 2 month waiting list and $50 pricetag for. I always wondered why anyone would want a burnt cheesecake lol. Thanks for clarification on it being caramelized! PS: Have you tried a water bath or cake strip on the pan to prevent cracking or would that interfere with the caramelization? Hoping I could get the texture a little bit more uniform (less gooey). I've had a slice of those $50 Basque artisan cheesecakes and that's what they perfected (although they also had a special brick oven to bake them in). Also, do we want the heavy cream room temp before too? Thanks to anyone with advice 🍮
You shouldn't use water bath for this cheesecake because its point is that it has difference in the textures. Actually, John's cheesecake is a little over baked, it should be almost runny inside and very creamy, its texture is completely different for NY cheesecake. The cream should be room temp as well. Hope I helped :)

I’m also have basque in me as I am half Spain and half Costa Rica. Learning everything as much I can from my roots to build myself some character.
