There is an Australia wide pie competition mostly for commercial bakers, I think it’s called the Great Pie competition, it’s for pies, sausage rolls and pasties. For the last two years it’s been a Thai green curry pie that won by the same Baker in Victoria, that won with his pie. I really want to visit his bakery but it’s a bit far away. Btw, it was a gluten free pasty that won in the pasty category most recently and it wasn’t even in the gluten-free category it was so good.
Not into thai green Curry but to taste a gluten free pie pastry that tastes as good or better than regular pie pastry...that’s the dream for people who are gluten free! 🤤 Thanks for sharing.
Kyneton Bakehouse Victoria wins at least 3 or 4 awards every year. Even won with their scallop pie. 1 hrs drive from Melbourne if you wondering where it is!

I made your chicken, miso, soy pie the other day and it was AMAZING!!! Its going in my special recipe book! I made a slight few changes where I used pie pastry for the bottom, but added puff pastry on top. I also mixed wheat flour and corn flour to thicken the gravy in a lighter way than only wheat flour. And lastly I made one big pie, rather than many small ones. When I ate it I added dollops of chilli paste on top, because in my world you cannot have too much chilies Haha I'll make this pie next! So many great tips here: brisket, 2 different crusts (though short crust can be homemade easily), spices (love lamb with cinnamon - beef, too!), soy sauce and tomato paste (maybe miso as an alternative)...Cracker of a recipe. I know it’s better than the pie bought around the corner. Great job!
The quality of the pastry makes a HUGE difference too, for me it’s kind of half the experience. Recently my favourite pie is a butter chicken curry pie, or the simple steak and mushroom.

I think Worcestershire sauce captures the complexity of flavour of the spices & umami (tomato paste and soy sauce), in case other people weren't brave enough to try that combo like me!

I just bought a £10 set of stainless nesting ring cutters from amazon to cut pastry for our pies fruit/meat as the kids love pies and CBA to waste time trimming and patching pastry. We use nonstick pie tins but for I still grease the moulds, butter for sweet pies and lard/beef fat for meat pies I find I get a better base crust by doing so. Vegetable oil also works if you are a vegetarian.
I'm English and so obviously I love a meat pie. This said, and admitting this may get me hanged as a traitor, Australian meat pies are better than anything I've had in England.

Pastry in Australia comes from the freezer, pre rolled in packs of 4-8 sheets depending on the type of pastry it is. I sympathise with you, also living in the USA, I miss the convenience of Aussie pastry, American pastry does not compare.
If you leave the edges on the puff pastry they puff up really nicely. I brought some of these to a party some time ago with two different types of fillings (and a little smaller in size). One type of pastry had the corners still on them and the other had the corners removed so I could tell which was which.

US Navy stops and I think it was the 2003 trip when I visited the zoo and then had meat pie. Was thinking about it last night and here I am. For you to have 1.2M subscribers speaks volumes. A dab of water or egg wash around the rims of the pie before you place the puff pastry tops on really helps 'adhere' the tops, you won't get that lifting of the lid then as you handle/bight into them Yummy recipe!

I don’t know if it’s still the case but we used to call it red sauce in Yorkshire when I was growing up in the 70s. The other was brown sauce (HP, Daddies etc). Great video.

Didn't have star anise so I used fennel seeds, didn't have any kechap Manis left so I used dark mushroom soy with 2 tbsp brown sugar 😍😍😍 delicious

One tip for eating pies, place one finger on the back end so as to prevent or slow down its splitting and losing its filling as you bite into it. 🥧

This is an absolute belter of a recipe! Time consuming but only because it is so impeccably executed and the ingredients in the filling seem like an excellent combination, I can't wait to try it :))

Truly delicious steak pie but I'd use worcestershire sauce not ketchup because I'm English.
