Saw this video this morning right after it was posted. Had all the ingredients, milled the millet in my VitaMix, threw it all together as instructed, baked it, ate it! So incredibly delicious and easy. I did end up baking it for about 15 minutes longer and it was absolutely perfect! Thanks for that tip and such a great recipe. I could not find date syrup or paste so I blended one cup dates to water and omg this bread melts in your mouth. Please You owe it to us to do a cookbook. Mainstream media would never hire this guy goes advertisers won't support him but I think he would do great on channel 13 and he needs to stick to his values because this is the best and I'm saying this is the best cooking show I have ever witnessed. Love the recipe! Since you mentioned sodium and washing your sun dried tomatoes, I’ve been experimenting with using potassium bicarbonate as a leavener instead of sodium bicarbonate (baking soda). Seems to work well for me and it’s a good way to reduce sodium and increase potassium in the food
I actually don't use any baking soda or powder when I bake for myself. However, I am mindful that the vast majority of people that make my recipes are expecting a certain look and texture, so I include baking soda and powder ... for now. I do plan to slowly gravitate towards not using them eventually. Great comment!

This is the best GF bread I have ever had. I made a full recipe and it makes a honking big loaf. It was hard to let it cool so long! It was slightly dense but still tender and not gummy, and had a great crumb. Easy to slice and put in the toaster the next day. The texture held for 3 days before it started getting a slightly gritty texture like rice based loaves have. I put half in the freezer for a week. I took it out three days ago, and it still slices like a real loaf of artisan bread. Still toasts right up, but the texture is just a little gritty as you would expect it to be. I thawed it in the fridge and it has kept its taste, “toast-ability” and nice crumb. Having the last of it for breakfast today and making a half recipe tomorrow. A hunk of this with soup or a salad and it’s gourmet eating time. So happy to have found this recipe. Edit: I left out the roasted garlic and the bread was delicious even without it.

That bread looks amazing! Do you avoid gluten altogether or just wheat? A rustic bread would be good with rye flour too but that has gluten. Do you ever do sourdough?
Thank you! I choose not to eat refined wheat. I don't have an issue with gluten because I am not sensitive to it, however, nothing I eat actually contains gluten.
This looks great and healthy. I do have one question. Can I use a flax egg instead of psyllium husks In the wet ingredients? I had a stroke and my swallowing food and ingredients like psyllium has been affected.
And can you make date paste. If you have a video on it, I can watch it. I eat more alkaline foods and yourvrecipes have been on point! Im definitely trying the sweet potato curry!Some of them you useca lot of cashews and thats a nut that not on my list. R there replacements that you can put in your description t h at can work as well? I’ll bet you could use a white bean in place of cashews. I see him doing that in other recipes.
