Mung-Fu: Easy 2 Ingredient SOY-FREE TOFU

  • MUNG-FU RECIPE:
1 lbs of split yellow mung
    5 cups of water
    3 tbsp lemon juice
    1 cup water
Soak the split yellow mung in plenty of water for at least 8 hours. Drain and rinse. Combine your soaked beans with 5 cups of water in a high-speed blender (may need to be done in 2 batches) Blend until completely smooth.
Add the blended mixture to a nut-milk bag and strain all of the liquid into a bowl. The pulp should be dry and the consistency of playdoh when you have removed enough liquid. Allow the liquid to sit for 30 minutes or more, so the starches settle.
Line a tofu press with very fine cheesecloth.
Combine 3 tbsp of lemon juice and 1 cup of water and set aside.
Pour bean milk liquid into a pot avoiding the settled starches. Cook on High, consistently stirring with a flat bottom spatula to avoid it sticking to the bottom of the pot, until it starts to lightly boil. Turn off stove, and remove pot from heat. Next, add the lemon water mixture, and stir. Cover and allow to curdle (15 - 25 minutes).
Remove curds, and add to the lined tofu press. Fold cheesecloth neatly around bean curds, and press firmly to remove liquid. Continue letting the Mung-Fu press in fridge overnight.
Cut and enjoy in recipes that use tofu.

Well what can I say brother other than a heartfelt thank you. You are helping me jail break the toxic food industry in a huge way. I’m 56, have ate fairly healthy most of my life by the social structure standard, but was totally oblivious to the damage that is done on the daily by eating foods that don’t feed my melanin. Your channel is a blessing and I share it with everyone that I care about. Its just that important. Again, from a Pan-Afrikan seeking a better way to live, THANK YOU, THANK YOU, THANK YOU.

As someone who has developed a soy allergy, I appreciate you taking the time to show us this alternative. Soy is a mono culture crop that oftentimes is sprayed with pesticides. In defense of soy you can buy tofu tempeh and milk with ORGANIC on the label. Soy is a popular for its many uses and as I live in rural america I see it go by the truckload to the silos. So mainly meat and dairy customers are those consuming GMO soy. To say soy is a great choice is not to take away from all the other wonderful beans available. Thanks for the wonderful recipe to expand our choices.💙🤹‍♀️

Thank you for sharing your experience with wfpb cooking, every time I watch another one of your recipes makes me want to get to your level of experience more quickly with also knowing their will be quite a bit of hic-ups along the way, along with enjoying the thought of all the great taste and nutrition going my mouth bringing nourishment to my marrow with great blood flow of energy.

I recently was diagnosed with a few things and they have forced me to give up red meats and pork. My Dr and nutritionist have recommended the vegan lifestyle. I was completely lost for a while after lots of reading and some videos like yours have me feeling much better about the change. my eyes are opened to a entirely new world of cooking. I love to cook I love to eat great food. Healthy is the best way of course and I thought I was eating healthier than I am now I was wrong . Thanks for your videos I appreciate you and the work you put into it

Awesome! Awesome! Awesome! Love this Bro! Great Mung-fu recipe. I will try it. The sandwich presentation at the end Rules on the internet Bro. Know that! I now declare you" King Javant" Master Chef of Whole Raw, Plant Based, Vegan Food. Now, I'm sure you know Mung Beans are used in the Vegan Egg recipe that's currently in the market. Would love to see your take on that. Hint: I would buy it in liquid or powder form.
