Boiled And Fried Cassava

Cassava is also known as yuca, manioc, mandioca and Brazilian arrowroot
For this vegan cassava dish you'll need...
1 package frozen cassava (about 2 lbs)
2-3 tablespoon olive oil
1/2 large onion (diced)
2-3 cloves garlic
2 scallions
2 bird's eye pepper (optional)
2 tablespoon parsley (chopped)
2-4 sprigs thyme
8-10 grape tomato (any tomato will work)
1/2 teaspoon salt (for boiling the cassava)
1/4 teaspoon black pepper

Which grocery did you buy the cassava
In sierra leone we use red palm oil

So simple and so yummy, especially for those who are not a fan of provision. It just missing some grated cheese :-)
I tried to keep in vegan/vegetarian friendly. so no cheese (good idea though)
blue0frangi nutritional yeast would give it a nice "cheesy" flavor, keeping it vegan

Thanks for the vegan recipe! :D I live in a mostly Caribbean neighborhood, so the grocery stories are mostly Caribbean ingredients. It helps a lot with all the ingredients I've never cooked with. I might be able to make "saltfish" with hearts of palm:
