    For this Corn Soup you'll need...
    1.5 - 2 lbs salted pigtails
    1 1/4 cups yellow split peas
    5 cups water (adjust as necessary)
    4 cloves garlic
    2 tablespoon coconut oil
    6 sprigs thyme
    1 large onion
    2 stalks celery
    1/4 cup parsely (chopped)
    1/4 teaspoon black pepper
    3 scallions
    3 pimento peppers (aka seasoning peppers)
    2 bird's eye peppers (any spicy pepper you like)
    3 tablespoon shado beni (culantro)
    2 cups diced pumpkin
    2 cups diced sweet potato
    2-3 cups chicken stock
    1 1/2 cups coconut milk
    2 carrots
    4-6 corn
    1 can creamed corn
    1 cup frozen corn (optional)
    1 cup allpurpose flour
    pinch salt
    1/4 cup water

    Thank you brother , its one of the best tasting soups ever and the first time I had about 90 % of the ingredients , 2nd time just corn , coconut shreds and Korean sweet potatoes , garlic and threw in some turmeric . I like it spicy and hot , so added pepper flakes , but its the corn and coconut that goes together like nothing else

    I'm glad what you said about packet soup. Old school don't use any of those dried ingredient. Chris I use a bit if fine cornmeal in my dumplings that's how my Grandaunt taught me. It's delicious. I'm gonna fly from the UK and help you drunk that soup. Noting naaah waste, noting nasah dash whey lol🤣😂

    Made this pot today, it came out sooo good! I’ve never had this before but boy was it tasty! I did leave out the pig tails. I’ve never tried it before so I idk if it came out right but the flavors were so good almost finished the whole large pot between my husband, parents, kids and myself. Not much left overs to reheat 😆

      pig tail, ox tail etc they add lovely flavors. they are however super disgusting and bad for your body. always nice to skip

    I freeze leftover soup in individual serving size pyrex glass bowls. Then when you need a lunch, you are ready to heat and go

      I used too.. but I didn't like the texture of the dumplings and ground provisions when thawed. Great Idea though

      That was my plan. I used to do this with other soups when I used to watch my grandkids. I would heat it up in one of those microwaveable plastic cup/bowls from Target or Walmart ($1-$2) while I would make their food (so I wouldn’t eat the same food they were eating). Trying to lose weight and eating with kids is very hard.

      I'm fortunate in Ontario.. we can get just about everything here in Asian, west Indian and many general supermarkets. Something even better quality than what I see in the Caribbean. That said.. I'll keep what you said in mind for my next trip

      Hey Vicki, ya make de soup as yet? I have to use salted meat too as the hubby doesn't eat pork... Doesn't quite lash like the pigtails would but it is ok. Add lots of pimietoes!

      Fabiola Antoine Hi. Don't know if this came from the Africans but, for early New Years morning ( like after 12:00am) most Trini's I know make a pot of black eyed peas & rice, with or w/o meat. It's always great while it's still hot. Said to bring good luck for the coming year. When I was a girl we used our fingers to eat it. Strange eh, make African food and eat it like East indians. That's T&T for you. (Maybe someone can confirm whether the African ancestry is correct or not.

    Hi Chris!! First I absolutely LOVE my hardback cookbook! Folks ought not sleep on that opportunity! Second, you made me scrap what I plan to have for dinner in Exchange for this soup. I was thinking of swapping the dumplings for yucca or butternut squash instead. Do you think that would compromise the soup too much?
