The Ultimate Curry Corn

For this vegan curry you'll need
5 corn
2-3 tablespoon veg oil
1/2 onion
3 cloves garlic
3/4 teaspoon cumin seeds
2 tablespoon curry powder (your fave)
1/2 scotch bonnet pepper
4 sprigs thyme
2 tablespoon parsley (chopped)
6-8 cherry tomatoes
1 1/4 cup coconut milk
1/2 teaspoon salt
2-3 scallions

Chris, I never heard of Curry Corn. I am originally from Africa, and we either roast the corn, or Steam it. So this weekend, am gonna surprise my girls with "Corn Curry'.

Chris the curry corn was lovely but I am in love with the herb garden ,it's wonderful to use freshly pick herbs in your cooking
I did this yesterday and it was fantastic, almost brightened up a cold wet day in the UK.

Here in Wisconsin we just boil corn and dunk it in butter and salt. This seems like a much better idea

utubegurl33044 Yes you must always cool out the rawness of curry powder, can't be sprinkled like cayenne pepper
i'd recommend cooking it out.. just my take on using curry powder
