I made these for work. I tripled the batter and divided it up to plain (I added a little lemon extract) and (with a strawberry glaze) a biscoff and Oreo flavor. Came out absolutely amazing.

I normally don’t like cheesecake but these were delicious! Also the whipped cream is soo good and lasted 2 days for me in the fridge (that how long the cheesecakes lasted lol)
Allow cheesecakes to cool completely to room temperature and then gently remove each mini cheesecake from muffin tin. Transfer to refrigerator and chill completely (about 2-3 hours) before serving.

oh no!! I just made this and completely skipped the sour cream and salt step.. it looks and smells good though! is it still safe to eat or would the sour cream make that much of a difference ??
Made these twice, the first time they sunk, I used a stand mixer. The second time I used a hand mixer and they also sunk. Both times they tasted great. I did double the recipe both times. Can’t figure what I did wrong
If there is a little bit of sinking that doesn't mean anything when wrong. If they sunk a lot there was probably a bit too much air incorporated into the batter. :( Doing double batches can sometimes cause this because you simply just need to mix it more to get it to come together. :(
O no! They are not supposed to sink. Did they puff up when baking? This is usually a sign they were over-mixed and the reason for the sinking. :( I hope they still tasted great.
Make sure you mix the ingredients only as much as it takes to make the batter smooth. Over-mixing incorporates too much air, which makes the cheesecakes rise during baking, then collapse as they cool. Also, don't take them out of the oven before they’re fully done--make sure the centers are fully set before you take them out. Hope that helps 😊
Unfortunately I’m not sure of a substitute for both of them. The sour cream you may be able to replace with full fat Greek yogurt but I’m not sure about the eggs

Hello Sam, I'm planning on making these for my anniversary party I was wondering if I can make these into Raspberry swirled cheesecakes?
You could add a little bit to the top and swirl it a little bit before baking. 😊

I wouldn't keep it refrigerated much longer than a day. I haven't personally kept it that long but it should still be ok.

The temperature will remain the same for gas or electric. It only changes when you go to convection. 😊

I do not but you can always add toppings like strawberry sauce, blueberry sauce, etc. :)
