A Very Berry and Balanced Blueberry Cheesecake

  • This creamy, brilliantly flavored Blueberry Cheesecake is so simple to make with NO water bath! My recipe has blueberries in both the cake and the topping for a bright, yet balanced berry flavor.

    Ingredients
    Crust
    1 ½ cups graham cracker crumbs (170g)
    2 Tablespoons granulated sugar
    1 Tablespoon light brown sugar, firmly packed
    5 Tablespoons unsalted butter, melted (74g)
    Blueberry Cheesecake Filling
    24 oz cream cheese softened (use full-fat brick style cream cheese, not the spreadable kind in the tub) (680g)
    ¾ cup granulated sugar (150g)
    ½ cup sour cream
    1 teaspoon vanilla extract
    3 large eggs, lightly beaten (room temperature preferred)
    2 cups fresh blueberries, washed and dried (311g)
    Blueberry Topping
    ¼ cup granulated sugar (50g)
    1 Tablespoon cornstarch
    3 cups fresh blueberries, divided (465g)
    ¼ cup cold water (60ml)
    1 Tablespoon lemon juice
    1 Tablespoon butter (salted or unsalted is fine)

    Instructions
    00:00 Introduction
    Crust
    00:19 Preheat oven to 325F (160C). In a medium-sized bowl, stir together graham cracker crumbs, granulated sugar, and brown sugar until combined. Stir in melted butter, stirring until all of the graham cracker crumbs are moistened.
    00:46 Press graham cracker crumbs evenly into the bottom and up the sides of 9” springform pan (I like to use the bottoms and sides of a glass to do this). Set aside and prepare filling.
    Blueberry Cheesecake Filling
    01:35 In a large mixing bowl using an electric mixer (or using stand mixer fitted with paddle attachment), stir together cream cheese and sugar on medium-low speed until smooth, creamy, and completely combined (scrape side and bottom of the bowl with a spatula to ensure ingredients are thoroughly combined).
    02:22 Stir in sour cream and vanilla extract until combined.
    02:38 Add eggs, one at a time, stirring until just combined after each addition.
    03:14 Add blueberries and use a spatula to gently fold them into the batter until well distributed. Pour batter evenly into prepared springform pan and bake on 325F (160C) for 45-50 minutes. When finished the center will be slightly jiggly but cheesecake will be mostly set.
    04:21 Allow cheesecake to cool at room temperature until no longer warm then transfer to the refrigerator to chill for at least 6 hours (preferably overnight, I do not remove the springform collar until I am ready to serve). 04:34 Blueberry topping can be prepared any time between now to an hour before serving.
    Blueberry Topping
    04:45 Whisk together sugar and cornstarch in a medium-sized saucepan.
    04:58 Add 1 ½ cups (232g) blueberries, water, and lemon juice and stir to combine.
    05:15 Turn stovetop to medium/low and stir constantly until blueberries release their juices and are softened and the mixture reaches a jammy consistency.
    05:51 Remove from heat and add remaining 1 ½ cups (232g) blueberries and butter and stir until completely combined and butter is melted.
    06:10 Transfer to a heatproof container then cover and allow to cool completely in refrigerator.
    06:42 Once cheesecake has set, spoon blueberry topping evenly over the top of the cheesecake (if it’s become too firm in the refrigerator, simply stir in a splash of water).

    I made this for the first time a few days ago with wild blueberries, and I am here to tell you, it was the absolute best cheesecake I have ever tasted, and that's not just because I made it.
    I usually like to share things I bake or smoke on my smoker with friends and family, but this cheesecake didn't stand a chance. My wife and I ate the entire thing in a bout 3 days, it was that good. I am in the process of baking another one as I'm writing this. And to anyone looking for an absolutely amazing dessert, make this recipe, you will not be disappointed, and if you are disappointed, your taste buds are way off... LoL Thanks for an awesome recipe, I'm looking at making your peanut butter snickerdoodle cookies next.....2 of my favorites combined.... you're a genius..

    Made this last night! Came out perfect!!! Had a few people getting seconds 😂. I was looking for a blueberry topping only when I came across this recipe. I usually don’t veer away from my cheesecake recipe, but after watching the video I wanted to give this one a try. I’m glad I did because I actually like the texture of this cheesecake just as much as mine. Great recipe❤

    Thanks for the great idea. I was just wondering what to use my frozen blueberries for. Me, I'm going to make them into a blueberry pie and then make that into a Cheeseblueberrycakin. How I get my cheesecakes from cracking is to use heavy cream and cornstarch in the batter. Pre heat the stove to 500 degrees. bake the pie for 5 minutes and then turn the oven down to 200 degrees and finish baking it for 90 or so minutes. And with the blueberries use molasses instead of sugar and a pinch of lime juice, yummy!

    Sam, I baked my first cheesecake last week and nothing it rose up higher on the sides than in the middle, it was lower in the middle, how do I correct this, also it deflated quite a bit after I pulled it out of the oven? Is this common?

    Can I use use frozen blueberries in this recipe?

      Frozen berries contain a lot of extra moisture compared to fresh. This recipe was designed for fresh berries, so frozen berries could have a negative impact on the texture if not substituted properly. Because of this, I really recommend sticking with fresh berries in the cheesecake itself; but you can always use frozen berries for the topping! :)

    In the ingredients it’s written 24 oz cream cheese (340g ) … but 24 oz is equall to 680g .. so if I want to make this recipe do I use 340 g or 840g cream cheese

      I don't recommend it, no. Full fat greek yogurt will work!

      They will have to be completely thawed, drained and blotted, but they will work. :)

      I couldn't wait and tried it.....OMG AMAZING!!!!! I'm very surprised how "not sweet" it is....I was debating on adding the jammy topping as I thought it would be too sweet but I was wrong. It just tastes fruity and wonderful. This cheesecake is simply divine and I will make this again but with strawberries...maybe raspberries....
