- No Bake Mini Cheesecake Bites with Strawberry Topping (MACROS BELOW)
It's that time of year! The sun is out, the tanning lotion is on, and my oven is OFF! As much as I love baking, there is nothing more annoying than having a hot oven on during a hot summer day. On that note, I wanted to share these delicious NO BAKE Mini Cheesecake Bites with a simple strawberry topping with you. They are sweetened using sweetened condensed milk...which I am extremely addicted to.These are soooo good. I could eat the whole pan in one sitting! Not only that, but they are so easy to make and look quite impressive! You can get really creative with the topping to make it extra pretty. This is something you and your guests with absolutely love.

NO BAKE Mini Cheesecakes with Strawberry Topping
Makes 12 Mini Cheesecakes - Double the recipe for 24
| Ingredients |
1 Package Graham Crackers (About 10 Sheets)
5 Tablespoons Butter, Melted
1 Tablespoon Sugar
2 8-Ounce Packages of Cream Cheese, Room Temperature
7 Ounces Sweetened Condensed Milk
3 Teaspoons Fresh Lemon Juice
1 Teaspoon Vanilla Extract
¼ Teaspoon Lemon Zest
Topping:
¼ Cup Fresh Strawberries, Chopped
¼ Cup Strawberry Preserves or Jam
| Instructions |
Prepare a cupcake pan with cupcake liners and spray with nonstick cooking spray.
In a food processor, blend graham crackers until they are a sand like consistency. Add sugar and melted butter and mix well. The consistency should be like wet sand and easily pack-able.
Add 1 Tablespoon of the mixture to each cupcake liner. Press down firmly using fingers or a measuring cup. Place in freezer for 10 minutes.
In the bowl of a standing mixer, beat room temperature cream cheese until smooth and light. Add sweetened condensed milk, lemon juice, vanilla, and lemon zest. Beat until well combined.
Pipe the filling into the mini crusts and smooth the tops with the back of a spoon.
Cover and refrigerate overnight to set.
Once set, remove the paper liners. (If they are not coming off, freeze the cheesecakes for 30 minutes to help the removal process.)
In a separate bowl, combine chopped strawberries and strawberry perseveres. Use a dollop to top the cheesecakes and garnish with a fresh strawberry.
Refrigerate until ready to enjoy!

Favorite part is that you didn't use any egg, my 3yr old son has an egg allergy so he misses out on a lot of sweets, but he will love this! Thanks!

Mine wouldn’t come out of the liner unless it was from the freezer! That sucks but they taste good none the less but set and firm was only out of the freezer
Or if you are in Hispanic countries use "Maria" cookies, they also work well to use them as layers with vanilla pudding another no cooking cool dessert

OMG, I love your spunk!! It makes it impossible to stop watching!! I'm somewhat disabled, and can't cook/bake like I used to. It was my whole life up until I couldn't do it anymore. I just threw mine in the refrigerator. I didn’t make them mini. I make it as a whole cheesecake. The recipe was so easy when I taste it before pouring on top of crust omg it was amazing. The lemon gave it a nice kick. I can’t wait for tomorrow ❤️

I've tried making no-bake cheesecake using condensed milk before and it didn't set up. Very disappointing...I'm so glad you mentioned that it has to set for 24 hours. THANK YOU! I will try again 😊
Toe Tapper absolutely! Also you can just pop them in the freezer for 3 hours and they are even better. I find that it’s hard to get the wrapping off unless I freeze them first

I made these. AMAZING! I also tried a batch with lime juice. Instead of lemon juice do lime juice and instead of lemon zest and lime zest and so freaking good!

Can't you substitute for say raspberry or blackcurrant basically it is a fruit and jam obviously you don't want anything too tart like orange or lemon but a sweeter fruit should still work

I made some several days ago & am still enjoying them from the refrigerator! The only mishap I ran across was that your title says, “mini cupcakes” so I went & got a miniature cupcake baking tray, but when got to the step of pouring the crushed graham cracker in the cupcake liner, I realized that I had way too much. Here I came back to the video & hear you say regular cupcake pan! Luckily I have a regular cupcake pan! Otherwise easy to make & delish!
