Chopping, grilling, charring, boiling, blending, baking - whew, I'm tired already. You did a wonderful job showing us that it could be easy for the more industrious folks out there. Great chef work. I did copy and print the whole process - cuz I will never say never.

This looks truly amazing .... just looking at the colours of the rainbow make this dish look so appetising (and my tummy grumbles). It's also a great recipe for any leftover veggies you have. I'm looking forward to cooking this one up in my kitchen x

This looks delicious! Love that it is no oil. I also like that the sauce is not potato-based like it is in so many cases. I have a potato intolerance, so finding an alternative for the usual potato and carrot base for the sauce is nice! Definitely going to try this!

Absolutely amazing! Works very well for a meal prep, kept it in the casserole dish with clingfilm over the top. Has lasted me 5 days (maybe any longer and it would go off). Definitely give it a go! ❤️❤️
Great meal, love the idea of a few nacho chips in the sauce for flavour, must try that. A handful of cashews in the pot with the vegetables will give it a great creaminess. Thanks for sharing

I made this but used black beans instead of peas, since it's a nacho-inspired dish. I also omitted the broccoli since I was trying to keep the theme a little tighter.
This looks fantabulous! Quick question...I don't have one of those covers to go over my gas stove burner...can't I just roast those veggies in the oven under my broiler a couple mins to do the same thing? Like...a minute on each side, then turn them on the other side for another minute?

I like your stuff Derick but this recipe is one of the best. Crazy healthy. I think the only processed things were nutritional yeast and tofu. But everything else is cheap to buy and easy to buy everywhere. I live it and will try it. And I think this recipe is a keeper. Thanks
