This looks like such a great dish. 8:43 Here in Canada it is possible to purchase a small bottle (430 ml or a little over 1 cup) of Salsa sauce with no oil. Even more surprising, is it's made by a major junk food company, "Old Dutch Foods" - famous for their potato chips and taco chips. I learned about this from my sister who years ago made lunch for me assuring there was no oil whatsoever in what she prepared, nor any sugar. Besides some rice and salad she pulled out of the oven what had been smelling wonderful all along: a tray with 4 Portobello mushroom caps filled with the chopped stems and topped with Salsa sauce. I assumed she had made the Salsa Sauce from scratch since we could do that at birth practically given our Italian roots. She laughed and said, "Are you kidding? Make Salsa from scratch for just 4 mushroom caps? No this Salsa is from a jar." I figured she couldn't have checked the label since I was certain there'd be both oil and sugar in any store-bought Salsa. In fact I had scoured aisles of salsa in health foods stores and specialty shops before this, but could not find any without oil or sugar or both. Since people and relationships are far more important than a few tablespoons of ingredients I was trying to keep out of my diet at that time, I had decided to just enjoy the love she expressed in bothering to make me lunch. But she wasn't done with me yet. She says, I just knew you'd expect that store-bought Salsa would have forbidden ingredients, so I saved the jar. I couldn't believe that the junk food giant of Canada, of all companies had beaten the health food store brands! You may even find some in the States when you get back. At the moment I'm still plugging away at a strict green protocol that promises to reverse kidney disease. 2 or 3 weeks to go yet. I swear watching your videos is a great source of sheer joy as I grind away at this grueling protocol. Thank you so much for all you share.
Just made this. It’s fantastic! I made the cheese sauce too kickin’ for the kids with the roasted jalapeño....so be sure to check the heat of your jalapeño. This was excellent! So glad I found your channel!
Made this tonight and it was amazing. Not gonna lie, I had my doubts, but this is going in my regular rotation. Such a nice feeling to know we got so many veggies into the kids with a nacho Mac pie. Hubby still isn’t loving tofu, but I’m working on him.

WOW! Such an indulgent recipe with so many healthy ingredients! Honestly, no one would know you sneaked in all those veggies (chickpeas, sweet potato, cauliflower, bean pasta..) ;D Also, the techniques you used(searing the tofu or charring the jalapeno), in spite of not having a fully equipped kitchen, must have made the biggest difference! Very useful flavour enhancing tips! The final dish looked INSANE! Very impressive! Anyways, sending you lots of love! Stay safe and keep creating delicious recipes for us!
