OMG I love this guy for so many reasons. He’s a vegan chef and a very neat one. I drive everyone around me insane cause I too clean as I go and when I serve the food all the mess is already gone. Thanx Derek you effin ROCK!
Oh so true, i still had chicken tighs in the freezer and made them as gyros for our friends and i afterwards i really was like "oh no i don't miss the cleaning after cutting and working with meat in the slightest" Water kettels are pretty common in europe everywhere i think btw.
Just subbed! Excellent content. I'm last 4 months a vegan, but prior to that did not eat red meat the whole of my life. But Between Gaz' channel, yours and the Game Changer doc. My wife and I made the switch. I am so happy this is starting to pick up momentum and big retailers are taking it seriously. Love the channel mate!
That looks amazing! There are so many recipes I want to try. I'm really excited that your videos are inspiring my meat-eating husband to try vegan dishes! YAY!
I love watching him cook in "real time" because he sorta reminds me of how I look making my way around the kitchen. I get the job done, but I definitely know my mise en place needs some serious work. Also, this ramen looks freaking amazing.
I know im randomly asking but does any of you know a way to get back into an Instagram account? I stupidly lost the password. I would love any help you can give me!
@Brady Tony I really appreciate your reply. I found the site through google and I'm trying it out now. Looks like it's gonna take a while so I will get back to you later with my results.
Same basic prep as the Hoisin Tofu. Nice. Just started using cast iron...game changer for searing and burner to oven cooking. A nice little trick for adding miso at the end is putting in a strainer basket, submerging in the water and whisking ...this eliminates any unincorporated miso paste.
I feel like I want to sprinkle sesame seeds on that pan with the tofu and the Mushrooms before it goes in the oven….hmmmm Your stuff looks so good! I need to get a go on my own mushroom repertoire. Thanks for the recipes!
Hello Derek! I just love discovering new & exciting Plant-based cooking shows. I love your recipes and watching you create delicious and healthy meals! I love this way of eating (a Plant-based diet rocks; there so much flavor and diversity!). I see you are a big fan of mushrooms and tofu, as I am. Thank-you for all of your amazing recipes and great cooking videos ( I'm learning a lot!).
Wickedly good! Not full throttle vegan or vegetarian but these meals make me rethink my diet. I am making teriyaki tofu tomorrow with brown rice and brocolli sides.
That’s so awesome! It was a slow transition for me too. All it takes is an open mind and a willingness to see what’s really on your plate. (Would you rather eat death or vitality) Good job starting the mind shift.
I absolutely love your channel. Your corkey and fun to watch...lol..love..this is something I will definitely try..! I was surprised you used the same water you cooked the noodles in to make the broth...so I will try it and see...! Thanks and love the slogan "change climate change with diet change"...!! Your absolutely right!!!
So glad to see this. Before I was vegan, I once did that 2-3 day process of making ramen from scratch. Was awesome. But now I miss ramen. And I won’t do the package even if it didn’t have meat. The amount of sodium if criminal! What do you think of blending the white beans into the broth? Making them part of the broth texture/taste?
I've been watching some of your 'wicked' cooking vids and most of time i've enjoyed it because it's so causal and it reminds me how i am apart from the amazing cutting skills. Alas, this one was a bit weak/disappointting, probabaly because i'm Asian and so i have a bit better domain knowledge. But for ramen i would definitely recommend the long dried one (similar to spaghetti) over the dried instant looking ones because they are ALOT like the ones you have in the restaurant and has more of a bite. For the soup if you're making it your own, i'd personally use a sweet soy sauce base with bit of white miso for the savoriness, seaseme oil for the nutty tasty and some japanese chilli spice.
Sorry to disappoint you on this recipe, Isaac, but we appreciate your support and suggestions! We always like to encourage people to do things their way...we share our recipes to help people on their plant-based journeys in the kitchen, and hopefully they can inspire and be a stepping-off point for other home chefs to create their own masterpieces!
Nah, takes to long for when I am drained and there is the whole time something to do . . . . I love things that have like no real work time, even if they take longer, when I can do the dishes and or just cuddle up with TH-cam while it cooks itself ^^
Thanks for watching! And yeah...the oil can always scale up or down (or don't use it at all), so please adjust things to how your prefer to cook and eat! We just want to help people feel more confident cooking plant-based and hope that once the recipes and techniques are in the toolbox, you can run with them from there!
I can tell you one thing… If I was the cameraman, every time the chef turned to get things like a ladle, beer, etc.… I’d be grabbing me a bite of the food 😆
Shamiso Muzorewa Electric kettles apparently aren’t common in the States. I’d heard that before and couldn’t believe it! They use mostly hob-top kettles.
Hi Derek I saw you for the first time a few weeks ago on TV with Greg Wallace talking about your new vegan mushroom steak. Best of luck with that I can't wait to try some! I went to find some of your products - I live in Ireland- and found them in Tesco. Delicious thank you! And then I stumbled upon you cooking for/with deliciously Ella this morning. Scrumptious and I'm making that for my family this evening thanks! And that led me to your page. My question, I seem to be allergic to tofu even though it's delicious, so I stay away from it, Any chance you could do a tofu substitute recipe please? I love the way you cook. Thank you! Caroline
Hi Caroline, thank you for sharing and watching! In regards to the tofu substitute, in most cases you can use whatever vegan product you prefer-depending on if you're trying to avoid soy completely, or if it just seems to be a tofu thing. Mushrooms are our favorite ingredient to use for "meaty" textures and flavors, but you can also try seitan, tempeh, chickpeas, beans, etc.
Just discovered this channel. Awesome. To be clear, when you say "throw away", "garbage", you mean these veggie scraps and parchment paper are destined for the compost. :)
I have 1 question I have found ramen noodles without the sauce in a shop ... so yea idk how many grams of them 2 use if some1 could help It would be great cause I rlly want 2 try these I need something healthy but comforting at the same time so this would be perfect also does anyone know what u can have instead of miso paste or how to make it I rlly need help otherwise ill find out by myself ill tell you guys how it went
People can be chefs all they want but when they're clean chefs, it hits different!
Totally agree!!

I’m making it this week. So simple and nutritious 😍

Beautiful ramen dish! I will have to give it a try! Thanks for the video.❤️❤️
Your food looks so good. Presentation is important. I don't use oil, so it's a nearly one pot miso soup. You gave me lots of great ideas.

Wait.......what......they don't have kettles in America 🤔 Great channel & another great recipe!
Try Bed, Bath & Beyond or Best Buy. Im British and lived in the US for over 10 years. First thing i bought day 1 was an electric kettle... :)

That’s still really fast. Considering it’s mostly Whole Foods from scratch.
I guess you could just heat up a processed packaged meal (yuck)… but… why when you can have fresh deliciousness
I don't even like brussels sprouts and those looked fantastic

love your videos. Do you ever cook with tempeh? It has more protein than tofu - keep up the great videos
Shitake stems can be shredded lengthwise and they taste like little bites of meat when you cook them. No need to throw them away.
soup lover here
How did I miss this???!
Do you have a recipe using celery root (celeriac)?
14:17 the gods shown you favor!!🤣
I think you bought the Shin Raymun packets judging from the seasonings you threw out there, which actually aren't vegan owing to their E numbers.
Yum!
Thanks, Jeri! Give it a try!!
In Tesco I can't find any vegan noodles - what product to do you use for the Ramen noodles?
Made it today without the broth, rice instead of ramen...it was delicious!
Love the riffs and hacks! Do it your way and rule the world!!
