I love curried rice salad (been making it for years!) this is the recipe I use - 1 cup of uncooked rice - cook and drain well 6 shallots (I normally just use a bunch) 2 stalks of celery cubed 3 tablespoons sultanas (I normally use more - just add until it looks right) 2 or 3 red apples cubed 1 capsicum cubedmix the above and then dress with the below 1 tablespoon curry powder and 1/2 cup Italian dressing mixed together. (I normally start with this - if it tastes like it needs more mix a little more curry powder and dressing - remember it will get a bit stronger as it sits)It is always better if you make it ahead and put in the fridge (allows flavour to develop and sultanas to soften) but tastes good straight away as well. I also tend to add in some cubed roast chicken to make it into a complete meal.
Great easy recipe - I like anything that is quick, healthy and tasty and as you suggested you can substitute all kinds of other options - I make one similar using sundried tomatoes, black olives, feta and green onion...and a clove of minced garlic...

I've been invited to my very first "Curry party" this Friday! I don't cook with curry so have come onto youtube to find a recipe! This was the first one I clicked on and instantly think this will be perfect! Everyone else is making curried chicken and potatoes so this lovely salad will be great! This looks amazing! I bet I could throw in some chopped chicken breast and serve over spinach to make it my entrée. I'm going to put this into the meal rotation!
@Sorgutentarer there is nothing useless in this salad except the processed brown sugar and white rice.. switch it out for organic cocunut sugar and brown rice and that would help. We as humans do need SOME carbs that naturally come with foods. Eating a small serving of this is a lot healthier than what most people eat.

Normally I hate when people as a lot of substitution questions, but since I cannot even imagine the flavors in this salad, do you think quinoa could be substitututed for the rice? Is Australia getting interested in the Paleo thing? Thanks, Chef.
I'm sure you can, but you'll need to find something to substitute so the spices together evenly (salsa, hot sauce, and cumin are great options to consider)

my mum used to make something like this and she used to add a tin of smoke oysters! it's yum.
I'm sure it will be just as tasty wth brown rice and it would up the healthy factor.
I make the same thing but add marinated artichokes, kalamata olives and almonds. The apple is a great addition!

"Sultanas" are raisins (dried grapes) They are commonly known as Sultanas here in Australia ;)
Cook sultanas with the rice. They will be really plump.
