Nice! I'm a chinese and I think you have done a great job for this recipe. I find its quite authentic especially when you added the soy sauce! :D Just a tips here: The eggs can be fried together with the rice if you want a better taste. This is what I commonly do: Before start cooking, beat the raw eggs with some white pepper powder n soy sauce added. After put all the ingredients to fry until can smell the nice fragrance, add in the rice and keep on frying. Then, add in the beaten eggs and fry until every single rice absorbed the eggs. This will make the rice even more tastier n it will be in golden color too. This kind of fried rice is normally called Golden Fried Rice. :D

I do this too with basic fried garlic egg rice. Just crack the eggs into the frying mix. And your right everything gets a nice golden appearance to it.

No worries about what you use in fried rice. Originally, fried rice is what you make with left overs which make more sense why overnight cooked rice works better than fresh cooked.
The best way to add the egg is just pour in the raw battered egg straight over the hot frying rice. Stir quickly and evenly, this way the egg will stick to every grain of rice. The taste is silkier, smoother, and better texture. This takes some practice though, but not at all difficult. Just a thought~

I know you are trying to make everything nice and easy but you cant BS people telling them frozen veggies are more nutricious than fresh ones because they were in a warehouse for a few hours. Keep up the good work.
Try and find you some Maggie Seasoning. Took me 40+ years to finally get behind the walls of a Chinese kitchen and there it was...the nectar of the Gods - Maggie Seasoning. That which was responsible for the authentic taste of ANY fried rice. That's what the Asians have been using for that AUTHENTIC take away flavour. Nice job on your dish, by the way!

@mindblast87 No BS - Frozen vegetables are frozen within hours of picking to retain their vitamins and nutrients. "Fresh" vegetables can sometimes be weeks or months old before getting to the supermarket or vege shop. Scientific tests constantly show the difference between frozen and fresh. I recommend reading the articles about this by Australian Choice magazine, a major consumer advocacy group. You can find their articles online, just look on Google ;)

@Ffojt It depends if you are serving it with anything else. If your just doing it on it's own (without side dishes) it will serve between 4 - 6 adults easily :)
Rice that is cooked the day before is best for making Fried Rice. Freshly boiled rice tends to clump together and get a bit smooshy (is that a word?!?!) I used regular white long-grain rice for this recipe.
1. If you want your dish looks brownish, add "DARK" soy sauce. Normal soy sauce you add in Chinese take-away is too salty and it can ruin the original flavor of your cooking. 2. Beacon is a fine choice, I use it too when I'm too lazy to buy BBQ pork :D 3. Raw egg is better than omelette, make sure the pan/wok and whatever you are cooking is HOT. Stir vigorously (without splashing XD) when adding the egg. Trust me, I'm from Hong Kong and I'm running a little Chinese takeaway restaurant =3

+Uvebeen HAZED You never put soy sauce in fried rice. To make restaurant quality fried rice, you need to use a rounded hotplate with a lid or a propane outdoor wok, along with the day old uncovered refridgerated rice. Regular house stoves don't get anywhere near as hot to brown the rice and to give the fried flavor.

Yeeey, I actually made it! It's simply fantastic! I simplified the dish by swapping some of the ingredients, and the rice turned out to be more crispy than I intended, but it's still just incredibly yummy! Thanks for such a wonderful receipt!

I live in Macau and of course, it's chao fan everywhere here. But, hey, that looks authentic and I'm pretty sure it's delicious! Someone said about putting in the soy sauce in the pan @ not on the rice- I don't think so. I think we only do that when we have to flavor the broth before putting in the noodle as in vermicelli. The way you do it is just right. Keep it up!
@XxExplorer54xX I recommend using spring onions, as they are sweeter and add a fresher flavor than a regular onion. It's not essential to add onion, but it does help add to the overall taste of the dish. All I can suggest is giving it a go, and enjoy the experience. Welcome to the kitchen :)
actually, we Asians particularly in the Philippines, we do have a lot of versions of fried rice because of our Spanish and Chinese influence in our cooking. but i love the way you do it and your ingredients is good. well done. i m hungry now
i make mine exactly the same as yours however when its time to heat up the wok with the oil in it, i also add some chinese cooking wine, a teaspoon or so of grated ginger and then just before serving i chuck in a bag of bean shoots... and its all good!

There is a wee tip from another viewer concerning the liquid seasoning Maggi ,,, Maggi is a great product in the kitchen and I'm sure it would certainly enhance this great fried rice recipe. My local speciality food store does not handle Maggi " due to the MSG content " but onwards to fried rice with our ribs tonight. And yes indeed, I always scramble my eggs with a bit of soya sauce before adding to the rice. Thanks for all the tips and for the recipe.
Hi all! Worked in Chinese restaurants which paid college expenses for Nursing! I know how we made traditional Chinese fried rice. First off, rice MUST be cooked the night before and cold overnight to be used for this recipe. You can use any rice you want such as white,brown or those other rices such as red or black or mix them. The rice needs to be cold for the starchy character that it becomes. So the correct oil is peanut oil and you would have your onions and chopped

@edhunley Australian bacon is different to American bacon. Ours is usually thinner, and it's usually cured rather than smoked ;)

That isn't a mistake. Adding undercooked eggs would make the rice clump together. That's why I cook the omelette separately.

The cheese grater is excellent - especially for doing Parmesan cheese. You can find them in specialty kitchen supply stores, or online ;)

A little vegetable oil is usually better than butter, as it is less likely to burn. Glad you enjoyed the recipe ;)
