    I knew an Irishman who made beans and he would just use 239 beans. I asked him, why. He said, if he put one more in, it`d be too farty.

    If buying dried pintos bagged , my mom would always pour the dried Beans out on the table and look/ sift thru them bc lots of times there will be little stones / rocks in the bag from the manufacturing plant. You’d be surprised how many stones you’ll find . Then she would rinse them thru a colander before putting in the pot with fresh water. Just a suggestion

    My wife works at a meat market and brings home ham bones. I make pinto beans with onion garlic and a table spoon of tabasco. A meal fit for kings.

      I love to watch Kent cook. I grew up on food like this, my grandfather was born around 1870, and all of my mother's recipes were very similar. It's nice to see that people still cook this way. We always save the hambone, and buy 2 ham hocks to cook lima bean soup. I wish I had access to hambones on a regular basis, (I'm jealous). Thumbs up, happy cooking.

      You can get smoked ham hocks that will do the trick at a lot of grocery stores. HEB here in Texas has them.

    In West Virginia my grandmother would use 2/3 day leftover beans and mix in flour and smash and make "frijoles fritters" kinda like a potato cake or crab cake but so good. Love your recipe.

      I grind beans seeds rice and use as my flour healthier in coffee grinder Used camp coffee in gravies,soup stock Nothing wasted bc were settlers cowboys etc so limited means

    I've learned that if you soak your beans overnight and pour out the soak water and rinse the beans before cooking then they don't cause so much gas.

      Peel a Potato or 2 and drop them in while you do the boiling, throw out the potato a little bit before it starts to fall apart.

      They don't taste the same either. Why? Because you're getting rid of some of the sugars that produce the methane. If you are afraid of the "gas" - don't eat the beans.

      Soaking overnight and rinsing doesn't change anything from my experience. They effect me the same no matter what.

    I love this channel. Started watching when I invested in some cast iron. My first time making beans and first time with this recipe. A few notes: my beans never split. Also, I made the mistake of burning it a little -- not the end of the world, but not a taste you want to introduce. I love spicy food, but maybe go easy on the jalapenos.
    Still a great recipe. Love it!! I don't have me a big bertha, but this is still great. Just gotta keep stirring and give it some TLC. Best ingredient to any recipe: some TLC.

    one of my grandfathers favorite things to cook was homemade beans usually over the 4th of July and his homemade burgers on the grill along with coleslaw and watermelon and the star of the show was his beans...you are the best Kent!

    Someone once told my wife's aunt that to keep them from being gassy you poke a hole in them. They came into the kitchen and found her poking holes in the beans. They asked her what she was doing and she said she was defarting them. Sigh.

      Years ago while working for the U S Forest Service an old skinner got the new Troop. He took out the small match box, drew a cross in it, and numbered it 1 thru 4 then threw a Pinto bean in the box and had the new troop shake the box and give him the number. After about 5 times, the young man inquired how long it went on. The old skinner told him "until you shake the Fart out of that Bean. Got Cha! LOL

    There is a type of sugar found in beans (oligosaccharide) that is indigestible for humans (hence the gas). However, if you soak the beans for 12 - 24 hours before cooking in water and an acid medium (baking soda or vinegar works great), remember to change the water a few times during that time. It will break down the sugar and make it digestible. No gas.

    Love your videos. My mom taught me to add baking powder just a teaspoon or so to a boiling pot of beans. Let it boil for about 10 min then lower temp and simmer. Add your spices, ham hock, bacon or whatever you want and the gas will be gone. It really works. I have made them both ways and when i don’t add baking powder, boy everyone gets gassy. So just add a little baking powder.

      Some say add a tablespoon or two of Apple Cider Vinegar to the beans when you leave them to soak overnight. Pour the soaking water off - the gassy bits will go with it. Put the soaked beans in fresh water to cook.

    4:18 Eager, Arizona! I went to police academy with a former fireman who decided to do a real job (I'm just kidding folks, firemen know I'm just busting ball$ on the hose draggers. We love each other) and became an officer with Eager PD.. he shared a name with a very famous soft rock/folksy type star of the 70's (I don't want to say his name because there is bad hombres on the inter webs). This fella was one hell of a nice guy and the cowboy with Kent looks like one as well and if they are examples of folks from Eager, then you should take a trip into the beautiful White Mountains and visit Eager. If anyone from Eager sees this you will know who I'm talking about. Send him my way. Its been years.

    Hey Kent i cook that recipe here on this video and i also make Frijoles Charros make the beans as usual but add some bacon , jalapenos and some Chorizo along with whatever cilantro type u like ( at the end ) pretty good eating

    Cowboy Kent, I made these exact recipe but used 2 pounds and adjusted recipe. Was gonna take some in lunch for work. Making another pot because EVERYBODY LOVED THEM!!!!!!!! Thanks for the recipe!

    Pinto beans with chopped up shank ham covered over cornbread is one of my favorite meals. Beans beans good for your heart, the more you eat the more you fart.

    If u soak your beans till the water smells sower rinse them off good then cook them critters low and slow and don't stir the beans your body will not retaliate .

    I always clean out any rocks and bad beans and soak. Just wondered if you don't need to soak them.

      Keeping them in a rolling boil longer, as he did, eliminates the need to soak. On the other hand, soaking them eliminates the need to boil and trims off a little time on the stove.

    No he didn't soak them and we all saw that but pinto beans don't really need to soak like maybe a kidney bean. I do soak all my beans just because of habit but I have made good pinto beans without soaking them. I tried that with kidney beans and it just doesn't work.

    We don't know each other yet, but we have the same background in a lot of ways. I want to ask for you and your lovely wife to say a prayer or two for my VERY GOOD FRIEND, JIM HILL. HE is not in good shape and in the hospital. He is my last BESTEST good friend and he taught me how to make a killer pot of beans for the snake hunt!!

    Try Anasazi beans from Adobe Mills, gourmet beans from SW Colorado, dry land grown.. they are good but you need to put in a bean ladder....let the little toots out

    PLEASE PLEASE PLEASE do a ranch beans recipe. I love the canned "original ranch beans" but loved to recreate it at the home and would love to see your Chuck wagon version.

    I like to eat a lot of pinto bean sandwiches.
    Mash the beans with a bit of miracle whip then spread as thick as you like onto some fresh home cooked or even store bought bread.
    Awesome good!

    Love all kinds of beans with any meal. But a burrito loaded with back and Pinto beans, pico, guacamole, lettuce. fresh jalapenos and either chicken or steak is one of my favorite dishes. Prefer authentic joints or homemade, but even at chains like Chipolte they are amazing. I live in a Pittsburgh suburb but there is a joint in downtown called Taco Town. Not trying to sound racist but our Hispanic/Mexican population here is very small, all the employees there are and anything(usually a burrito), but no matter what it is I get is ALWAYS with extra beans. I get black and pinto, it is hands down my favorite place I have ever ate at. If I eat there I use their Red Devil hot sauce, if I take it home I use tabasco sauce. I love Italian food and my grandma and mom were amazing cooks and I have done it for a living, so I appreciate and love food, If you are ever in Pittsburgh it's a small little joint on Smithfield Street, one of the two main drags downtown, their food is authentic, amazing, and just truly delicious...

    A good trick to eliminate gas (and it works--done it many times) is soak the beans overnight in tap water and change it out at least twice. They cook faster too after soaking. I like this cookie.

    to get rid of the gas in beans ,all you got to do is put a mesquite limb in the pot....all the little farts can climb out

    Kent, I think you're taking a big chance by not sorting those beans before cooking. Someone could easily chip a tooth on a rock, I have found dozens of rocks in bags of beans over the years.

      I started helping my mother sort beans back in the '50s. I've been cooking for almost 60 years. I think that qualifies me to have an opinion regarding safe handling of food.

    Dad was from Northern New Mexico, around Sugarite near Raton, on a Cattle Ranch that's still called the 'Honey Place". He cooked beans this away. He didn't use no fancy seasoning. I remember he loved cumin.Taught me to eat Jalapeno n scrambled eggs when I was young.

      As I was packing up the beans left over, I believe I discovered something new. I believe that when I soak the beans for at least over night, I get almost double the volume of beans. Same number, but each bean is bigger.Comments?Thanks

    To degas use baking soda, add a teaspoon of baking soda to 4 quarts of water. Stir in the dried beans and bring to a boil. Then turn off the heat and let the beans soak at least four hours (I usually do this the night before I want to use them; the longer soak won’t hurt them). Drain, rinse and rinse again.

    To get rid of the gas, I pour me some Coke in the beans when done. If you can put root beer in taters, then what's a little co-cola in beans? Also, may not be cowboy, but I do love me some pork sausage in my pintos, Cook up a mess of mustard and turnip greens, and some corn bread, and man! That's a triple happy dance!!

    I prefer to have raw onions in my beans when I'm making a bowl to eat cooking them all that time reduces them to nothing mite get little flavor out of em and out of 500 bags of beans in my life I've never bit a rock I never sort them but I do rinse them off

    Loved the Boy Scout story, don't blame you for wanting to get outside the blast radius.
    The first really good meal I ever cooked was on a Boy Scout trip, over an open fire. Hamburger, canned baked beans, a bottle of ketchup and some Worcestershire sauce. I had other Scouts bringing me their stuff, to cook, and kept the pot going for two days, just kept adding to it.
    We put the campfire scene in 'Blazing Saddles' to shame, big medicine to a bunch of 11 and 12 year old boys.
    It also instilled the love of cooking in me, first real job I ever had was in a 5 star restaurant as a dish washer, just so I could watch the real deal chefs do their thing. What I learned from them was, do the basics right, like taters and rice and beans, and then add a little twist at the end.

    I don't recommend just pouring the dried beans into the pot right from the bag. Today's field techniques have greatly reduced the number of tiny stones that might be in that bag, but there is still some chance of breaking a tooth. Spread each handful of dried beans on the table, spread them out to one layer, and look closely for any "non-bean" particles.

    I've heard several times from several people about chopped up carrots thrown in with the beans will take the gas out but whatever you do don't eat the carrots.... maybe someone can confirm this for me?

      casserole brand beans, available here in texas, are presorted, pre-washed, and pebbles removed. that's the brand cowboy kent uses. 👍

    I love me some Pintos, but I do not aways get to use ham hock, so I have made them with smoked sausage and even put in some skinned diced potato in with them, which my wife never had before and she loved it

    Love your recipes, but you really do need to wash and sort your beans before tossing them in the pot - nobody wants to eat beans with dirt, rocks and stones that are often found...

    there is no one that loves pinto beans more than me.but a friend of mine brought me some that I think I like it even better than pintos they are called yellow eyes .
