This is the very first video I watched when I discovered this amazing woman a few years ago. I watched it again and was flooded with emotion and reminiscent joy. I miss her so much as so many of us do. I love how she says OLIGOSACCHARIDES😂 What a blessing she was to all of us . She made you feel like you were her personal friend, even though she didn’t even know I existed.🥰🙏✝️

I tried the technique shown here and I noticed I don't have the hurting gas like I often have, even from the canned beans. I cooked up a 2 lb bag of pinto beans, mashed them with the immersible blender, used a portion of them for tonight's burritos and the rest were put in freezer bags, ready for the next burrito night! It is a long process, so I gambled and cooked enough for later. Thank you for keeping your mom's recipes on TH-cam
My grandmother is 104 years old and she said that the secret to her longevity is that she ate pinto beans almost everyday in her adult life. Cooked simply. Thanks for your informative demonstration!
Love your story, Thomas. My great grandmother lived to be 104 and while I don't know everything about her diet, I do know that she loved to eat one chocolate as well as a piece of cake with milk poured over top. I named my daughter after her💕
I just found her today 4/6/2020.... I learned a lot today. And even learned how to make dumplings. I'm soooo sorry to hear she's passed away. She's a good teacher. Really explained everything so calmly. Thanks so much
Me too! Tried soaking overnight the other day with baking soda. Came out horribly after cooking till tender the next day. They smelled and were putrid! And they tasted like baking soda besides! The chickens wouldn't even go near em! Ugh... Gonna try this method soon! Sorry you had to go so I have to say thank you in memoriam. Bless you and yours.
Cooking a big pot of dried pinto beans today! Wed 2/9/22 so checked back to Phyllis's recipe!! Thanks for keeping all her recipes up online! They are our Encyclopedia we refer back to often!
Our adult son started the soak last night...ALL FIVE POUNDS! So I guess we'll be having pintos in one form or another for a LONG time! LOL. No problem though, because now I can use Mama Phyllis' recipe, wonderfully simplified, along with dumplins, which the whole family loves!
Over 10 years ago I saw this video and searched for it today to learn how to cook pinto beans using the 3 cook/rinse method. I am changing my diet to a plant based diet that calls for beans as the main source of protein. My beans are on their final segment of cooking. I also added a piece of kombu, a seaweed which also eliminates bean gas. In cooking dry beans we avoid consuming the harmful compounds found in the linings of canned beans and we also can avoid salt in our beans if we wish.
I'm a disabled veteran who had to have a total colectomy after a military injury and you saved my ability to enjoy one of my most favorite foods in my life. I've tried some many ways of cooking them and they were always intolerable for my digestion. Legumes are so healthy in many varieties and I lived on them alone many times, so thank you dearly for giving me back the gift of being able to tolerate these again!
ion77799 if you need some help l am in Ohio. I know what its like to be hurt. Maybe l can find foods better for you to handle. I use a vita mix a lot. I look up foods for a diabetic friend.
Doloris Seeley -- deloris in OHIO- please would love some help. Do you have a sister called Mary?precious lady was so kind to me &’my 3 girls- mary Seeley. Connection?
have you tried soaking the beans over night then using a pressure cooker? you have not had beans until you put them in a pressure cooker. the cook time is 1 hour 30 min it really does a great job for something i eat nearly everyday.
I'm goin to try it this way, but just a couple thoughts. Never pour boiling hot water down your drain, always turn on the cold water with it. That boil water "can" deform your PVC drain pipes. And second, never use hot water straight out of the faucet to cook with, hot water sits in a water tank and "could" have bacteria in it. Phyllis, you are a gem, my wife died several yrs ago and she was the cook, and she loved doing it. But I only learned how to use the micowave and so I can't cook the beans the way she did. With your way I believe I'll have me some good pinto's soon. Oh, and she used "smoked turkey legs" in her beans, minus the bones. But I am going to try the dumplins.
The older the pinto beans the darker they look in the package that is another reason to screen them prior to cooking and always remember to check the expiration date or BEST BY date. Thank you Mrs. Phyllis I will try your method today😋👩🍳💕
My mother used to make chicken and dumpling soup when I was a kid and I loved the dumplings the best (from the chicken and veggies). I'm 57 now and I bought a bag of dried pinto beans at the store today and I've never made them before. Perfect time for this video. I love that she added dumplings to them.
Phyllis! You are my new queen!!! I made a pot of pintos right after watching this video, using your method, and to my surprise, it WORKED!!! We have been eating them for 3 days now, and no one has had any discomfort! Especially me...from my guy! lol! Thank you so much! I will be forever grateful and will ALWAYS use this method! :)
I soak my dry beans in water, for two hours, with one tablespoon of salt, one tablespoon of baking soda and two tablespoons of flour.(any kind) Rinse well and they should cook done in just two hours. Eliminates the gas and speeds up dinner 👍
I treasure Phyllis's recipes and memories of her. This recipe or bean cooking method is so wonderful . Czechs and Germans prepare spaetzle in a similiar manner to dumplings. Spaetzle usually come as a pasta like dumpling or homemade as here in this video. Thanks for showing this again !
Another trick my mom taught me was if you needed to add more water to your beans after they have been cooking is to boil the water , you want that added water to be equally or hotter , not just room or faucet temp.
In the 60's when I was a kid, Granny had me sort the beans like that on the table. then she would cook them up, make cornbread, with white cornmeal, fry some potatoes with onion, slice a tomato and cantaloupe. Man that was a meal to behold. Sometimes she would make some skillet fudge.
Wow. Did we have the same Grandma?! That's how my Grandma was when I helped her in the kitchen. She taught me a lot about cooking, canning and cleaning!
My mother had me do that in the early 2000s I found it got very boring, we stopped being so thorough when I and later my younger brothers started eating more, we also got bigger pots and pans.
Glad this worked for you Vonesh. I don't think I mentioned this on the video but once I fixed pinto beans and put 2 very large videlia onion into the pot about twenty minutes before they were done. They were so good I ate the whole pot over a period of about 4 hours. I just couldn't stop eating them. So every year when the videlia onion hit the market I fix pinto beans just so I can add a whole bunch of onion with the pinto beans. I always appreciate your comments. Phyllis
I had a neighbor who was from Mexico. She said they eat beans for breakfast allot along with other times. She showed me how she cooked them and it was very interesting. I really liked her method. Never stop the cooking process once you start the cooking. Rinse well at the beginning and start the cooking. Always keep a pot of water on the stove boiling water and whenever the water boils down and gets low, add more boiling water....never cold or unboiled water. Keep on going till they are soft...then season however you want. Its worth a try and keeps the flavor also.
She got out of the cursed place just in time, things are about to get real ugly, most are asleep at the wheel, they are in for a very rude awakening soon.
You are right no gas what a wonderful surprise When I made this my husband said these were the best beans he had ever had and we loved the dumplings Thank you Thanks again
This happened to pop up couple days ago. I have tried different recipes for tastes and stop gas. As a three-year-old child my aunt made me sit at the table until I ate my lima beans. I ended up falling asleep and not eating the beans. But now that I am way older and the fact that beans are nutritious, I thought that there has to be a way to cook these things. I figured I would try this recipe, because this was a totally different recipe. I did the next day and I am so delighted! Not only did they taste good to me, there was no gas! I am sorry to just find out she passed away. I so wished I could have told her what she has done for me. She has given a gift that keeps on giving! May the Lord Bless her while is sleeps! Also bless her family!
I have eaten pinto beans for almost 68 years and never, ever, heard of cooking them they way you did, and I love dumplings, never knew how to make them! Thank you so much for your videos!
*Baking soda is what my mom always used. Once the beans are boiling very hard (about 20 minutes after they're boiling very good) add 3 - 4 tablespoons of baking soda. Stir, stir, stir!! All of that foam, green & yellow colored foam, is the gas that's concentrated. Pour ALL of that water & foam out. Add NEW water. You can cook as usual, OR, do the process with the baking soda one more time. I always do it twice. Our family has NO PROBLEMS with gas, all thanks to my mom knowing how to get rid of that gas. Now, be sure to fix a big cast iron skillet of yellow cornbread. Oh, don't forget the sweet onion!!*
being a diabetic myself, what i do know about how the body processes the bean, with the exception of a few,is that the body of a diabetic breaks down the bean like a complex carb without spiking the blood sugar levels and the fibers help maintain good blood sugar levels thus giving one the feeling of an energy boost.
@@Murpheys. This is the truth, just remember to never combine beans with rice, always add a protein or vegetable side. If the beans are combined with rice, tortillas will make insulin spike. :)
😔 This morning is the first time that I've let myself go back & watch one of her videos. I miss her & her stories & teaching us All about cooking. She was such a joy to watch & learn from. She & Mr. Bucky, are Together & in a Better place now. God Bless Them. Thanks for the Sweet Memories.
I really enjoyed your video, you made my stress go away! Your the type of person every family needs! You are an excellent teacher! My beans are soaking now, Thanks for Sharing
Wow! I have made pintos for years and never knew you could pre-boil them to eliminate the gases. I will be doing this technique from now on! Thank you again for yet another awesome video! My mother and I are hooked on watching them! I pray you and Mr Bucky are doing well! ❤️
Mr. Bucky passed away and Phyllis has cancer and we haven't heard from her in months. Everyone's on pins and needles hoping either she or a family member gives us an update on her health. Many prayers are being received on Phyllis' behalf.
I too am high strung so Phyllis with her soft, slow intelligent speech is very calming. Thanks to her family for keeping these on you tube. Her life and marriage to Mr Bucky was sweet and enviable!
Thank so much for showing us how to correctly stop the gas, I looked for years for a way to get the gas out of the beans, with no luck. so just stopped eating beans. and I love beans. So much is lost from one generation to the next. thanks again. May Jesus keep you and your family safe. God Bless.
Hey Phyllis some of my guest like the beans with that oligosaccharides in them and some of them dont. So I just rinsed the beans and boiled them. My Grandmother told me, God rest her soul, said to eat one slice of pineapple before you eat a bowl and one slice after and you wont get the gas. And it works! Thanks for your video, you're the best.
rob good That may work bc of the bromelain (enzyme that digests protein) in the pineapple? It's concentrated in the "core"... the part some people discard bc it's too fibrous for many.
Laurie Paris, how do you eat the core of a pineapple? As I cut them up, I crew on the left over core to get the sweet part but have never eaten the tough core.
Omg, I thought they was worms and would throw all of it out. Until age of 30 when my husband (who was a farmer when he was young through college) He laughed and said we can plant them and get plants to help cut cost of buying. He said the same it was the root. Boy I felt dumb. I grew up in CA and he grew up in TN where we reside now. His mom doesn't cook like she used to so he said her cooking isn't as good. So learning special little secrets that I had never heard of is so wonderful. Thank you! 😘🤗
never heard of pintos and dumplings - but will be trying this - and will definitely be trying the boiling 3-times method to get rid of the gas problem. I usually soak mine over night but never just boil for a while the next day - cook until done - so I'm excited to try this. My sister tried once to put everything she ever heard of that would remove the gas from beans -and it still did not work. I will share this method with her too. Love dried beans - favorite is the great northern beans. Hey, just reading a few comments - has someone said this nice lady passed away? Hope not - but if so, I know she's in heaven with my friend JESUS.
I wanted to cook pinto beans and I knew who to look up to get it right! Better than expected I'm going to do it with dumplins, then with bell peppers and onions, thanks y'all ... I miss her but it's super sweet to have these sweet, made with care and love videos. God bless ya'll thanks for keeping it going. Lifted my spirits. 🙏🏾🥰💜💯💛
Very informative with a different spin using the dumplings. I appreciate the time you took making this video. I enjoy learning... Education is key to so much! You are very calming to listen to, and that's good for me, as I am high-strung, and I appreciate those who aren't. They relax me! Thank you!
I grew up eating pinto beans and dumplings. But when I tried to make it myself the gas was to painful. Now I see what I was doing wrong and will try them again. Thank you.
I see your comment was last year but in case you see this - what do you do with the potato? It's added whole? Does it dissolve in the bean gravy or do you pull it out, what next? Thanks!
Peel it and toss it in. After they're done, toss the potato in the garbage...DO NOT EAT! Lol! You will have horrible gas if you do. You can also use a couple of whole raw carrots the same way.
Great video! I’m Hispanic and I love beans. I’ve tried several methods recommended to me for cooking them. To no avail really, other than they are delicious. I’ve never even heard of pintos with dumplings. I’m so excited to try them out. Thank you so much for your tips! 😊👍😋
While the beans are boiling, just add a tablespoon of sugar in them at least 30 mins before getting done. The sugar will not only take the gas out of the beans but will also make you a thick gravy. This also works great with crockpot cooked beans too.
@@janetbrowning9089 ❣️My husband is from Virginia & He said they don't call pinto beans soup beans, it's Navy Beans, & I'm from Arkansas and my Grandma never called pintos, soup beans... I guess you could put them into your soup but everyone always knows Navy Beans as soup beans.
Hello Phyllis. When ever I cut the top off a plastic bag from something I'm only going to use part of, I use that strip I cut off and tie the bag shut with it.Just something handy that works. Love the video, thanks for sharing.
I see I'm not the only one who watched this video all the way through. Who knew a video about eliminating gas could be so mesmerizing? I think it's Phyllis's voice that draws you in and won't let go. I'll be buying pinto beans tomorrow and trying this. Thanks.
Mother nature intended for pinto beans to darken over time to a brownish color. However, it’s tougher selling a darker pinto bean than selling a brighter pinto bean when it comes to certain markets. When pintos are first harvested they are typically much lighter in color, but as the days + weeks + months pass pinto beans naturally darken due to exposure to light + heat + the natural elements.
Loved watching you mix your dumplin' dough! Reminded me of Mamaw when she made homemade biscuits in her dough bowl, a wedding gift hand carved by her father! I have that dough bowl today! ❤️
Tried the exact recipe. Worked out amazingly. i added some diced jalapeno peppers and added some red pepper flakes as i like my food a little on the spicy side. but the little dumplings turned out great and the beans were also nice and tender! thanks so much Phyllis
My experience with pintos is the darker the older they are and you can boil them for hours and they don't get soft. Another thing I learned is how to save the beans when you forget you're boiling them and they burn. First thing is set the pot in cold water then scrape the burnt beans out into another pot fill with water and throw a peeled potato in it boil until they're soft and throw away the potato. I gaurantee you the beans won't have a burnt taste to them. If some are stuck to the bottom of the pot don't put them in with the others.
OMG, I love this lady. I've never managed to duplicate the taste of the pinto beans my mother made throughout my childhood and by the time I thought to ask her for her recipe, her memory was about gone and she never wrote anything down. But this very simplified recipe sounds like it may render one of my fondest childhood tastes. I loved the "soup" as much as the beans and crumbling the cornbread into it. This video is so informative, aside from the recipe. Wonderful surrogate "Mama!"
Miss Phyllis, you are my very favorite food expert and you are wonderful to share your knowledge with all of who are eager to learn how to make such good meals for our families. I don't think I am presumptuous saying , YOU ARE AMERICA'S MOST CHARMING CHEF and such a patient teacher. We love you! We're all hopeful you can create a book containing your recipes and wonderful tips and of course Mr Bucky's input as well as your precious doggies and cats who love you so much! Lots of love to you and your family. ❤️ Elizabeth Conboy
Michael Harren Meee THREE!! She is so calm and chill and seems to have a lot of great insights on life, so intelligent. She reminds me of my Nana and her recipes actually work. Being born in the Southwest and having lived in Texas for forty years, I've eaten my fair share and then some of pinto beans! I've never ever heard of pintos with dumplings, my family might revolt against me if I did, since in their opinion, dumplings are for either chicken or for apples!
Jean Medley We ate tomatoes marinated in vinegar, salt, and black pepper as a side dish with our red beans and rice when we were young. Hadn’t thought about that in years until after reading your comment. Don’t remember having gas problems after eating beans then. Time to revisit this reminiscent childhood food favorite again.
The baking-soda technique works pretty well -- a teaspoon while they're soaking. Just make sure you rinse the beans really well and throw out the soak water (don't use it for cooking). If the beans aren't well rinsed, they'll have a funny alka-seltzer taste (the voice of experience here).
I love beans I was always taught to clean them out and take the rocks out and the half pieces but I always had a problem with the gas and no one has ever taught me that you had to boil them for 10 minutes rinse everything and then do that three times thanks you thank you for letting me know that God bless you
I use all purpose flour with two tablespoons baking powder and one teaspoon salt. I also cook my beans in broth. Chicken or beef both work well. I love your idea of tiny dumplings. Thanks for sharing!
My Dad's favorite meal was a big pot of pintos and a pan of cornbread ... I think my Mom cooked beans for him several times a month. I have always soaked mine overnight in water and baking soda and then do the parboil before I put them on to cook. I am going to try your method of the 3 boils next time. My Dad also grew kale in his garden and gave it to everyone in the neighborhood. When he first started giving it to them, none of them knew what it was as it wasn't much of a southern thing back then and he had to get his starts from my aunt up north. Your beets made me really miss my Mom's pickled beets. She also put cloves in hers and canned many quarts every year. When we finished all the beets in the jar, we would boil eggs and peel them and put them in the jar to pickle the eggs ... they were always so pretty when you took them out of the red beet juice. Thank you for some wonderful memories :)
Thank you so so much!!!I have asked this question for years and no body knew how we can go to a Mexican Restaurant and eat beans with no problems of gas and make them at home and everyone is in trouble.Thank you so so much.
This really is important information. I can remember in 1981 cooking a pot of beans and frying some potatoes and making cornbread. My mom always did this and I was excited to do this for my family. My kids were young at the time and we were living 2 states away from my dear mama. Anyway when done and we were all at the table I looked around at my husband and children. "How do you like the beans?" I ask them. They are not enthusiastic but so sweet and say that they are alright. My husband seems like he will pretty much eat what ever I fix. I say out loud "they taste earthy to me? but what I am thinking is that they taste like DIRT. I talk later to my mom on the phone and she asks me "well honey, how did you cook them?" When I tell her I just poured them in the pot with water she was horrified and explained to me what I needed to do first which was what you just said in this video. She taught me so much. I laugh at that now and am so thankful that no one broke a tooth.
LOL !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Love this . When I first got married I didn't know how to cook ,I cooked spaghetti for over a hour and fed it to my hubbie .When I came back he was smiling and told me the food was good and he was full he couldn't eat anymore. Found my spaghetti outside on the flowers ,he tossed it out the window when I left the room lol I know how to cook now . God bless you and your family :)
ladysmithrose the first time that I tasted hummus when I was so young somewhere between 7 and 10 years old and this is so long ago it was hard to find garbanzo beans or chickpeas as they're called. so I bought as much as my eyes thought I needed. Nobody told me that they got bigger so where I was staying I was alone for the day. Luckily my neighbor had just bought a whole bunch of Rubbermaid products for her house that had not been used yet because I had every pan Bowl any unused Rubbermaid trash cans from the neighbor I had hundreds of pounds of soaked chickpeas and they weren't even cooked yet so they still had growing to do well when I was done I literally had hundreds of pounds of beans and honestly I was so distraught I don't even remember how I dealt with it! I was in somebody else's kitchen and alls I was trying to do is make a couple of cups of hummus and make a little more to put away LOL other than that I cooked really well I just hadn't gotten that concept yet well you never forget especially that one I never seen anything like it it was like a joke. And now it is a joke
@@ladysmithrose Thank you so much. This year my husband and I will have been married for 50 years. I am too good of a cook now, meaning I enjoy my food too much. I love that Phyllis has put these video's out to teach the young who are interested.
My mom cooked pinto beans once or even twice week..served with corn bread..and sliced raw onions on top of beans..yum yum but I am going make this way with dumplings
I love the slice raw onions on pinto beans and also on fresh string beans, the cornbread just tops it off with deliciousness and very filling too, it's a keeper.
QuietQueen Project have you heard of people using a couple of pieces of kombu? it's a kind of seaweed that you're probably familiar with the big wide kind and it's dry you soak it with the beans and it's got a chemical that helps break down those sugars that cause the gas. I don't eat any animals and haven't for 53 years and it works for me and I don't even get gas anymore other than what's normal for the human body because that is part of the digestive process even if we don't notice you'd be shocked at how much we lose in a day LOL it's so hard to talk about in a proper sounding way because we're not used to really talking about it. Even though it's so normal. does the soda inhibit the cooking time or leave the bean harder when you use that much salt? one of the rules about beans is to never add acid like tomatoes or salt until they're cooked a bit, that is how I keep my beans firmer is to get them started and then as soon as I know that they've softened enough I add the acetic things and the salt so that they don't get so soft that they fall apart when I need them whole or more whole. I'm just curious if the baking soda would it make them hard as a rock when you try to cook them? it's so great to hear new ideas after all this time.
Nana also remember the more you eat them the more your body will produce enzymes to help you break that down also read what I wrote below to Queen about kombu. It really helps break down the part that gives you gas and remember gas is a normal part of life. Just keep your bean dishes very simple at the beginning until your body starts getting used to it. I remember when I was a kid how it almost killed me but I'm in my 50s now and I'm 53 years vegan and was mostly vegan right from the beginning and you know only had meat when people forced me and then I would be in the hospital because I was highly allergic. I promise that you'll always have gas from eating because that's normal. The excess gas of a new food enzymes will always kick in eventually you might need a little bit of help by eating papaya enzymes which are fairly inexpensive still pineapple raw afterwards if you can tolerate it you have to have it so ripe. also make sure that you've got good probiotics that have at least 10 different kinds so your body can choose what it's going to make up for your good bacteria every person's body chooses different kinds so mix it up a bit. Also make sure that you're eating some starchy foods like jicama it's a brown round root if you're not familiar with it. the starch helps grow good bacteria! Happy Beans everyone! someone made a joke on another one it's finally time to get the men back eat your beans!
Oh my gosh, you cook like my mom did. I am 75 years old and I remember mama doing the same thing, no recipe just experience. I truly enjoy the memories you bring back. R.I.P Ms. Stokes. Las Vegas, NV January 9, 2021
Oh so sorry to hear the news. This is my first time watching her and been seeing several of her videos today. I fell in love with her cooking and her explanation as she goes along. I love that. Not too many do that. That's southern culinary. But, me being a Latina woman, I do degas my beans too. But I do Chile beans or mashed beans with the pintos. God bless her. May she RIP
I love your colander. We had one just like that at home growing up. I remember having that in the cupboard for my entire life. We used it to clean the beans too. It was over 30 years old. When my dad moved, it got lost. I found a new one that looked like it a few years ago but, it didn't last long. One of the legs and handles broke off. They don't make things like they used to. Thank you for your great lesson.
The recipe looks so interesting. I never knew how to get gas out of beans. But, was told to put a pinch of baking soda in the pot when boiling the beans would take the gas out. Probably not true. And I love the dumpling recipe with the pinto beans. I’m going to try it out . The beets and the greens are perfect side veggies too. You sure can cook👍🏻 Thank you for sharing this recipe with us😃
Phyllis, I just wanna be your neighbor and crash your house at dinner time everyday... Your always making things that look so good... Even if we follow your recipes it wouldn't be the same as tasting your food. Thank you for all your great videos... Love Ya!
My mom always made dumplings in our beans but her doughnut didn’t use a leavening in hers.the basic recipe was 1 1/2 Cup all purpose flour, 1/2 cup of milk and 1 egg. Though they were cooked like yours. I had never ever heard of anyone else putting dumplings in their beans. When we were in Germany landlord made spaetzle and dropped them by small tsp. Into boiling liquid and the recipe was similar to the spaetzle that is put through a sieve. We all loved the dumpling so we had to at least double the recipe. I will have to try your recipe the next time I fix beans and take a few and put your dumpling in and do a comparison. I have a feeling that I will like both. TFS My name is Phyllis also
Phyliss, have you ever cooked or eaten "Leather Britches"?.... That is an old time southern staple that I was raised on..... It green beans that were strung up on string and dried in the sun.... Then broken up and cooked in water with meat and potatoes.... They reconstitute themselves with a much deeper fuller flavor and are to die for.... I sometimes dry the beans and cook them.... Once dried they can be stored in a grocery type bag....no need to freeze or can.....
I just discovered Phyllis💗.Making her beans and dumplings today. Grateful for her skills and teaching! Love to her family. Thanks so much for keeping her videos up. I look forward to watching and learning from your dear mother.💗
I watch her all the time, she was a Gentle Soul and very Meticulous so I know that everything is done perfectly to a T in the end.....I sure miss her and I send Prayers up for all her Family and Friends when I watch these.....You being her Son must be a lot like her in ways of Wisdom
If it wasn't for pinto beans, I would have starved to death. Really! We were very poor and that is what we lived on... our main source of protein. We moved from Alabama to Chicago in the mid 50's and Mama used to spread the beans out on the table and roll them around (to check for rocks) and Mama's friends (from up there) asked what she was doing... She would tell them she was "rolling the gas out of them"! ha hah ha... They didn't know any better! :)
We ate pinto beans as well. My pop always cooked them so that the broth was nice and clear brown. Beautiful color. Then my mom would serve us a bowl. She would add a dollop of sour cream or some cheese and some chopped onion and tomato. Delicious.
I love when I add to much buttermilk to the dumpling dough, because like you, I have to add more flour and that results in a lot more dumplings. Yummy!
I rewatch these because I loved this woman and her gentleness.
Amen me too. 🤗

Love your story, Thomas. My great grandmother lived to be 104 and while I don't know everything about her diet, I do know that she loved to eat one chocolate as well as a piece of cake with milk poured over top. I named my daughter after her💕
Protien without the cholesterol, definitely didn't hurt.
Phyllis was a lovely lady and a wonderful cook. I still enjoy her videos.
So sorry to hear of this sweet ladies passing. Heaven gained another angel.
Aaaaawwwwww did she pass away.....when???????
If she left the gas in the beans she'd probably still be with us
Oh no! That's so sad. 😢

Cooking a big pot of dried pinto beans today! Wed 2/9/22 so checked back to Phyllis's recipe!! Thanks for keeping all her recipes up online! They are our Encyclopedia we refer back to often!
They'll be there as long as folks want to watch them, Carmen!
Agree 100%🎉❤
YES!!!! THANK YOU!!! 🙌🙌💓🙏🙏🥰
By watching her videos.. I feel like she’s still With us!!🥰🙏🙏🙏💓💓🕊️🕊️🕊️
Im grateful that these videos are still available to keep learning from. Rest with the angels, Ms Phyllis.
Me too I remember this Dear Lady before she passed away....I loved watching her cook...

Phyllis’s channel was one of the first I found when we were locked down. She helped me feel like life was normal.
I love these videos - they STILL teach me and I STILL refer to them often. She always answered my questions and gave the best advice. LOVE
Totally love listening to Phyllis' mesmerizing voice--she's so serene and peaceful.
I Agree 💛.
R.I.H.P. Rest In HEAVENLY Peace Mrs. Phyllis Stokes. We will always Love you and your beautiful family !!!
The older the pinto beans the darker they look in the package that is another reason to screen them prior to cooking and always remember to check the expiration date or BEST BY date. Thank you Mrs. Phyllis I will try your method today😋👩🍳💕
Tyvm for sharing Tht tip😊...tbh I nvr noticed any diff in colors!😏
Aww thank you all for this, your mother is so missed
OMG, I just discovered her TH-cam channel. What a lovely soft-spoken generous lady. May God rest her peaceful soul.
My elders taught me baking soda at the very end or when they are just bout done! Works everytime! Thank you!
Naw baking soda from the beginning.
I was taught that also from my granny. Also only Casserole brand bean's. The lighter the bean's the quicker they cook
Kita, I was taught the same thing. It breaks down the seed coat and they cook faster, too.
I soak my dry beans in water, for two hours, with one tablespoon of salt, one tablespoon of baking soda and two tablespoons of flour.(any kind) Rinse well and they should cook done in just two hours. Eliminates the gas and speeds up dinner 👍
Now they say the baking soda keeps you from absorbing the proteins in the beans. I wonder if they changed something in the baking soda?
I treasure Phyllis's recipes and memories of her. This recipe or bean cooking method is so wonderful . Czechs and Germans prepare spaetzle in a similiar manner to dumplings. Spaetzle usually come as a pasta like dumpling or homemade as here in this video. Thanks for showing this again !
Another trick my mom taught me was if you needed to add more water to your beans after they have been cooking is to boil the water , you want that added water to be equally or hotter , not just room or faucet temp.
I totally cheat and use the water from my Keurig
In the 60's when I was a kid, Granny had me sort the beans like that on the table. then she would cook them up, make cornbread, with white cornmeal, fry some potatoes with onion, slice a tomato and cantaloupe. Man that was a meal to behold. Sometimes she would make some skillet fudge.
Coyote Trail I would love the recipe for that fudge. Yummy.
Coyote Trail Yum.
Wow. Did we have the same Grandma?! That's how my Grandma was when I helped her in the kitchen. She taught me a lot about cooking, canning and cleaning!
Karla Thomas Thank God for grandmothers. I sure miss my own dear grandma!
Phyllis

Phyllis Stokes that sounds yummy to try!
It's like my grandma is teaching me to cook! My grams are both deceased. Love this!
I love rewatching. I'm about to make beans. You are loved and remembered.
You just keep adding the boiling water to the beans till they are done.

Still as good
This happened to pop up couple days ago.
I was coming on here to tell her that I liked and subscribed to her channel. She seemed like a really sweet lady, and condolences to her family.
D Hoosier oh yes, sounds great! my husband is from Louisiana so he fixes Hot-Water Corn Bread, it's even better than any corn bread...
Never forget the Onion and the cornbread 😊
Sweet onion?
@@cjsmomom Vidalia onion that's our expression of a Vidalia onion
3-4 tablespoons? Can't you taste the baking soda if you use that much? I only use a pinch.. Does the trick for me!
being a diabetic myself, what i do know about how the body processes the bean, with the exception of a few,is that the body of a diabetic breaks down the bean like a complex carb without spiking the blood sugar levels and the fibers help maintain good blood sugar levels thus giving one the feeling of an energy boost.
Thanks for your comment. My husbands type 2 and I needed to know it was ok for him to eat, as he loves beans. :)

Thanks for your video, you're the best.
good advise, lets see if works out!!!
I love all kinds of beans. Fresh, canned or either slices of pineapple?
rob good That may work bc of the bromelain (enzyme that digests protein) in the pineapple?

We just toss a clean uncooked potato in the pot let em cook away! It works every time(NO GAS)!
Thanks! I'm gonna try that!
I see your comment was last year but in case you see this - what do you do with the potato? It's added whole? Does it dissolve in the bean gravy or do you pull it out, what next? Thanks!
Even without soaking them overnight ? Just clean and rinse beans and toss in a potato ?
Is the potato skin on or peeled ?
Rosemary, sage and thyme will eliminate the gas.
Peel it and toss it in. After they're done, toss the potato in the garbage...DO NOT EAT! Lol! You will have horrible gas if you do. You can also use a couple of whole raw carrots the same way.

While the beans are boiling, just add a tablespoon of sugar in them at least 30 mins before getting done. The sugar will not only take the gas out of the beans but will also make you a thick gravy. This also works great with crockpot cooked beans too.

Thanks for this information.
Candice W I didn't know this. I have only cooked and eaten the darker pinto beans!
It seems the darker ones take a little longer to cook. I think it's because they are older and drier.
Candice W p
I freeze my left over beans after I have looked the ones i'm eating, it keeps your beans from aging and drying out..

To eliminate the gas problem try adding a small amount of cider vinegar at the end of cooking. Try it. It works :)
My mother always gave us vinegar on our beans, never had gas from them.
Jean Medley We ate tomatoes marinated in vinegar, salt, and black pepper as a side dish with our red beans and rice when we were young. Rinsing the beans 3 times is the key. If you add a dash of baking soda into the beans that may help too
The baking-soda technique works pretty well -- a teaspoon while they're soaking.
We had the eggs pickled in beet juice at an office party one year and they were a big hit with everyone.
Great idea for my leftover beet juice! Thanks for leaving these videos up! Greetings from California.🇺🇸

I always let my beans soak in baking soda water that tends to eliminate the gas as well
I never heard of this. I'll have to try it. I have such a bad time with beans and the gas they cause.
QuietQueen Project how much do u use cause it doesn't to get enough gas out for me
Gomez l Addams no the baking soda tenderizers the Beans
Such a gentle lady with a gentle voice. Tragedy she has been taken from us. Praying for her.
My grandmother had that same one as I was growing up.
You sure can cook👍🏻 Thank you for sharing this recipe with us😃
Love your thumbnail.
I was just thinking of her today and she popped up. She was so sweet and smart.
I have always loved watching this lady. She reminds me of my aunt Elsa.
Thank you!! I never knew to wait till the end to add salt. I've been avoiding dry beans for years because I hated the leathery skins! 😝 You rock.
Phyllis, I just wanna be your neighbor and crash your house at dinner time everyday... Your always making things that look so good... Even if we follow your recipes it wouldn't be the same as tasting your food. Thank you for all your great videos... Love Ya!

Why dinner time 😁? Why not lunch time (broad daylight)? Or you want more than dumplings along with the Pinto 😁

Me too!!. Let's all meet up next week!!?
You remind me of Keanu Reeves . Very handsome and hot you are.Bryant Fernquist 9.
Thank you for this tip!
Those beans are fantastic!!!
I'm from eastern ky and oh how I love "leather britches!"!
I've done this, too. We call them shuck beans and nothing compares to their flavor! Delicious!!!
my mawmaw dried hers in the smokehouse so they had a slight smoky flavor. i loved them.
Thank you!
RonRay was poor too. Lots of pinto beans as the main meal.
RonRay I hear ya. I am 49 on disability and if it wasn't for pinto and paruvian beans I would starve. 💜
Poor too. Lots of beans and bread.
We ate pinto beans as well. My pop always cooked them so that the broth was nice and clear brown. Beautiful color. Then my mom would serve us a bowl. She would add a dollop of sour cream or some cheese and some chopped onion and tomato. Delicious.
I remember those day very well. Yea for pinto beans. These days I love beans and I can them for a quick meal of beans and cornbread.
I love when I add to much buttermilk to the dumpling dough, because like you, I have to add more flour and that results in a lot more dumplings. Yummy!
I just add ginger to my boiling beans to prevent gas. Great video!
The Gente from the south use oregano and cumin
Ok it
I always come back and watch the videos over and over..I love watching her cook and she is so humble..
It is so so sweet to hear this precious woman's voice.
