Making Dim Sum For 3,000 People - A Frank Experience

  • Frank Pinello is back with another episode of A Frank Experience, this time learning what it takes to serve dim sum to 3,000 people in one day at one of the largest restaurants in North America. He visits Jing Fong, a 25,000-square-foot Cantonese banquet hall in Manhattan's Chinatown that serves Hong Kong-style dim sum and has been open for over 40 years.
    Frank learns how to fold and steam dumplings and how to work the traditional woks. Over the course of the day, Frank learns how to make dishes like beef chow fun, shrimp shumai, potstickers, and pork buns, and then he serves dim sum to customers with the banquet hall's pushcarts.

    So sad they closed the big room. The virus killed them. I saw the owner literally in tears in an interview and was number one concerned about the number of longtime employees he laid off. Solid dude. I loved the food there. We drove up from Philly every Xmas time for dim sum since the 80’s. Great memories

    The fact that this type of food is considered “cheap” and an Italian place can charge $35 for a plate of pasta...This is incredibly nuanced and delicious food and it seems like a crime that its not at the forefront.

      it's not cheap, you get the same amount of food like a bowl of pasta, you'd have to order several dim sum dishes. The average price for a medium size is about $5 and you get bite sized finger food.

      @@keyboardwarria well the bill should be for X amount of people. You never get it alone, unless if you're Chinese, you would be screaming at each other to pay the bill yourself. Decent Dim Sum restaurants are $2-$5 a plate. Only time I ever saw $5-$8 a plate is in the tourist areas in the middle of manhattan.

    Everyone in this restaurant is very nice and super accommodating. You really can see how they welcome Frank, give him tips and also, being honest without being offensive. You can learn from them in a great way. I love it and this show is awesome!

      But in reality there like fuck we have to slow down and be nice on camera, dont get me wrong for them its a kick for a few min but they cant wait for the canera crew to leave becuase uf they have to slow down it means they will have to work so much harder to catch up when they leave so in all honesty they just more than probably want to not be on camera to get them out so they can work.

      100% This episode is in some sense the epitome of what food media "should" be. Frank is such a genuinely kind and interested person, stepping outside of his comfort zone, showing humility and respect. The restaurateur and the staff are kind enough to share and accommodate while being honest with respect to their standards. Then, the story you mentioned brings it all home full circle to show how beautifully communal and human the whole experience is.

    Doesn’t matter whether you’re the head chef or wash dishes at a restaurant, Frank has the same level of respect for every person. Watching him is seriously humbling, he’s such a genuine person and it seems like everyone he meets enjoys his presence.

      Edit: Rewatching it, frank was lifting the thing off the stove whereas the chef was using the edge and not lifting it at all.

      I used to live in Fortress Hill and would go to a place not far away that was almost identical to it. It makes me really hungry and it’s 8am where I’m at. Dim Sum is a heart touch.

    There’s a hell of a language barrier but it’s really entertaining and wholesome to see that they both understand each other. I’m pretty sure someone is there to translate in the raw footage but it’s fun to watch.

    The trick to the wok is they balance it on the edge of the burner and they use it as a fulcrum for leverage. Cast iron walks of that size are too heavy to flip just with forearm strength for most people especially if you consider that they work for whole shifts.

    This one came out really well. Being a Cantonese-Brooklynite and spending my whole life around Sunset Park, Bay Ridge and Bensonhurst, it had some personal weight for me too. I was interested in seeing how these different worlds I lived around would interact. Frank is awesome as usual.

    Lol, I ate there many times with my relatives every time they're in town. I love your charisma, you made it so interesting. As Chinese, I don't even know how they operate inside the kitchen. I mean this certainly open up my eyes. It ain't an easy job to do cooking in that hot kitchen. Kudos the chef and you young man 💪 did a great job trying out in the kitchen and serving the table.     I'm so happy to see this. I'm from Detroit, but have been to JING FONG dozens of times. I always go to Jing Fong's. I've even searched for other equally as authentic and tasty dim sum restaurants, including to Flushing, but they don't exist. Jing Fong is simply the DIM SUM PALACE of the USA. Since I do tour groups, I have brought thousands of people to have dim sum for lunch. Many of them tried it for the first time. GREAT job, Frankie, for bringing your dashing personality to the kitchen and dining room. Long live Jing Fong. Long live Munchies!!

    Amazing. As a Chinese/Canadian/British person who has lived in many places including New York it is so clear to me how food brings us all together. Dim Sum is an amazing experience, so even if something is unfamiliar, just try it once! The more people the merrier so you have choices at the table. A great way to laugh and feast with friends and family affordably. It was also so interesting to see how much hard work it is for something that might seem so humble. It brings back many memories of family meals on a weekend.

    Ohh gosh this was so entertaining!! Those "jet engines" -- I love that Frank gave it his all in trying to wok-fry the noodles. Look at how impressed and amused everyone looked. He brought a great attitude.

      Keyword usually. Some foods taste better when prepared in large quantities. Especially small bite sized foods like dim sum.
