Upside Down Peach Cake Recipe

  • Ingredients:
    * 3-4 peaches
    * 3/4 cup sugar (for caramel)
    * 8 tbsp unsalted butter (softened)
    * 1/2 cup sugar (for cake batter)
    * 1 tsp vanilla extract
    * 2 large eggs
    * 2 cups all-purpose flour
    * 1/4 cup almond flour
    * 1/2 tsp salt
    * 2 tsp baking powder
    * 1 cup heavy cream
    Instructions:
    1. Preheat the oven to 350°F (175°C). Coat a 9-inch cake pan with nonstick spray, place a piece of parchment paper in the bottom of the cake pan.
    2. Peel and slice the peaches into wedges. Arrange the sliced peaches in the prepared cake pan in concentric circles, overlapping slightly as needed.
    3. Add 3/4 cup of sugar to a small saucepan over medium-low heat. Watch closely. When the sugar begins to melt around the edges, gently swirl and stir until the sugar melts completely and turns a deep amber color, about 6-8 minutes. Pour the hot caramel over the sliced peaches.
    4. Prepare Cake Batter:
    * In a large mixing bowl, cream the butter and 1/2 cup sugar together until light and fluffy.
    * Add the eggs one at a time, beating well after each addition.
    * Stir in the vanilla extract.

    * Gradually add the heavy cream mix until combined.
    5. Pour the batter over the peaches and caramel in the cake pan. Spread it into an even layer. Bake in the preheated oven for 50-60 minutes, or until the cake is golden, and a skewer inserted into the center comes out clean.
    6. Allow the cake to cool in the pan for 15-20 minutes. Invert the cake onto a serving plate, remove the parchment paper, and let it cool further before slicing.
