Secrets to Perfect Chocolate Muffins

- Ingredients:
* 210g all-purpose flour
* 60g unsweetened cocoa powder
* 200g granulated sugar
* ¾ tsp salt
* 1 tsp baking soda
* 1 ½ tsp baking powder
* 2 large eggs
* 170g sour cream
* 100ml vegetable oil
* 120ml milk
* 2 tsp vanilla extract
* 1 cup chocolate chips (mix into batter)
* ½ cup chocolate chips (for topping)
Instructions:
1. Preheat the oven: Set the oven to 425°F (220°C).
2. Prepare dry ingredients: In a large bowl, whisk together the flour, cocoa powder, sugar, salt, baking soda, and baking powder.
3. Mix wet ingredients: In a separate bowl, whisk together the eggs, sour cream, vegetable oil, milk, and vanilla extract until well combined.
4. Combine wet and dry ingredients: Slowly add the wet ingredients into the dry ingredients, mixing just until combined. Be careful not to overmix the batter.
5. Fold in chocolate chips: Gently fold in 1 cup of chocolate chips into the batter.
6. Spoon batter into muffin tin: Line a muffin tin with paper liners and fill each liner about ¾ full with the batter. Sprinkle the remaining ½ cup of chocolate chips on top of the batter.
7. Bake at 425°F for 6 minutes: Bake the muffins at 425°F (220°C) for 6 minutes.
8. Reduce temperature and continue baking: Without opening the oven, reduce the heat to 350°F (175°C) and bake for another 14 minutes, or until a toothpick inserted into the center comes out clean.
9. Cool and enjoy: Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
