I've done the deep fried skin strips during BBQ's as a before dinner snack for everyone. I usually rinse the skins a few times to remove starch and then add it to a salt water brine for like 15 to 30 min before deep frying then add any seasoning while still hot and oily
or the potato that you scoop out combine it with some cabbage and onion and flatten it out and fry it in a lightly oiled pan and you have the English classic Bubble and Squeak.
I can see myself making a plate of fried skins for family to eat while i cook holiday meals. Have to make mashed potato anyway, might as well give them something to munch on.

My wife wanted potato skins. So I baked 6 potatoes and cut in half. Then scooped them out leaving just a small layer of potato in them. Sprayed them with oil and sprinkled with kosher salt and air fried them until nice and brown inside. Then added bacon, cheese, chives, sour cream. I made the scooped out potato into twice baked mixture with bacon, chives, garlic and sour cream. Formed hamburgers with a slight cup or bowl to them. Placed cheddar cheese slice to act as a barrier between the grease and potatoes and scooped the potato mixture on top. Then cooked them in the smoker. The potato picked up some smoke right along with the burger. They were so delicious! Just put them on the plate and ate them like a main entree.

I bake taters till the skin is crispy and then slather on the heart stopping, I can't believe I'm using 100% butter. When dining out, I ask for the skins others shun and tell the waiter/waitress bring on the 100% wholesome Butter and if by chance they have any skins floating around before they get stuffed, I would love to have sone.. They come and free of charge. Huge tip for the waiter/waitress . Next time I'm in, they remember and I get skinned till I'm full.

You could have taken the scraped out potato from those wedges and made a garlic mash out of it, and then either piping bag there or spread it on like butter like you did and then do the toppings. Thanks for the content guys awesome recipes
The chips would be really good with some Old Bay sprinkled on them. We have a thing we call pig skins. You half the baked potatoes and scoop them out, deep fry then top with pulled pork bbq and cheese, sit under a broiler to melt and brown the cheese, then top with chives/green onions and dip in sour cream.

I live in St. George, UT. A town named after a guy the early settlers called the "Potato Saint". George A. Smith and his family crossed the plains and Rocky Mountains back in the 1840's. Unfortunately, they ran out of food to eat, except for potatoes. Being a good man he gave his wife and children the meat of the potatoes and he ate only the peels. His wife and kids all perished from malnutrition while George lived to settle SW Utah. The reason being that the nutrients in potatoes reside in a thin membrane between the skin and the meat of a potato. Thus, unknowingly, George was getting all the good stuff from the potato while trying to keep his wife and kids belly full with the starchy meat. Since I learned that fact I rarely skin potatoes. Not even mashed potatoes. Only when requested will I skin them and then I either bake or air fry the skins. That way nothing goes to waste. Plus air fried peels are fucking awesome.
There used to be a potato Chip called 'O-Boisies' and it was literally this. A chip with the skin on one side. They were so good! I wish they still made them.

This may be a personal thing but I’ve never seen someone peel potato skins towards them. It’s weird bc as soon as I seen it it stuck out like a sore thumb even though I’ve never really thought about it. I always grew up peeling potatoes forward
I, right handed, always peel potatoes toward me to follow the curve. I always peel carrots, cucumbers away. Balance use of peeler, uses both peeling surfaces.
Throwing out potato peels involves peeling potatoes. If those peels arent part of my mashed taters, I don't want those mashed taters! (Also why we prefer red potatoes)

Including microwave corn on the cob like I saw where you cut off the fat end and squeezed out the husk's and all of the fibers all at once. I can't believe it took New 52 years to figure this stuff out😊
Never throw away piratic skin, out in lemon water, I make them into cheesy skins with bacon, sour cream and chives,.. if have gravy make a play on poutine, awesome side dish, always look for ways to use them.

40 years ago, I worked at Elmer's Pancake house. He took leftover bake potatoes and made two appetizers. Bacon skins and cheddar stuffed potato balls.
