The dulce de leche is available in same size xan already caramelized usually in the Hispanic food aisle from Nestle La Lechera beand and almost the same price as the sweetened condensed milk. Just a note to save time preparing .
Hey Sam! I seen an Amish cook make caramel the same way and she opened both ends of the can and just pushed the bottom out luke a Push-Pop and cut slices of the caramel for a different desert. Pushing it out with the bottom lid made it very easy to get it all out without much effort! Happy New Year! That meal looks amazing! I am going to have to make it with a little less expensive steak!

Made the Banoffee on NYE as it’s my father-in-law’s birthday and he doesn’t like cake. OMG!!! Thankfully I made two of them because everyone , including the owner of the bar/restaurant we took it to, loves it and begged for the recipe. It sounded weird but it is a keeper! Even better for hungover breakfast this morning!

Took a 1/4 inch off the side of my thumb making Au Gratin potatoes with my mandolin, back in October. It’s officially healed over the holidays. I wear a chain glove now. Be safe out there, fellow cooks, chefs, and bakers! Those things are no joke. 👍 Happy New Years!

I had Banoffee Pie last time I went to Scotland and stayed at a resort (thanks to the Tour I was on). So sweet - but so good! Didn’t realize how good and easy it is! Happy New Year!
Hey Sam - you should keep the top vent of your kettle fully open to allow it to breath properly. The bottom vents control the temp and if you shut off the top vents, you risk having too much smoke which creates a dirty heat and it can cause pretty harsh bitterness on the food.
Definitely gonna make this, minus the $700 tomahawk. Potatoes might take some effort, but looked delicious. Nice to see a longer video closing out 2024. Happy New Year!

Sam, the flames are from the fat melting. You want to keep it there. You’re charring the meat. Charring is flavor. Once each side has a beautiful char approx 3 minutes a side move the meat to cool side to cook internally. And start your basing at this point. If you’re basing from the beginning, you’re burning your basing by causing the flare ups.

Unfortunately I lost my father on December 13th 2024 and he was my biggest critics on cooking and not 1 meal he was disappointed from you.
