      At first Nick's did not appreciate the name. It was the locals in the neighborhood that labeled it a garbage plate. Later just accepted it.

    Authentic Rochester Hot Sauce Ingredients
    ½ pound ground beef
    1 ¼ cups water (as needed)
    1 tablespoon white vinegar
    ½ teaspoon paprika
    ½ teaspoon black pepper
    ½ teaspoon chili powder
    ½ teaspoon cayenne pepper
    ¼ teaspoon salt
    ¼ teaspoon ground allspice

      This is correct!!!! The cloves allspice and cinnamon are flavors I tend to dislike (reminds me christmas) but blended into the meat hot creates something great. Without these unusual flavors, I don't think it's actually a plate. And simmer for hours to break the meat down for the right consistency.

    I went to University of Rochester in the 80's and went to Nick's many times in the wee hours of the morning. I remember there was an ordering procedure, similar to the soup nazi from Seinfeld. You would step up to the counter, be greeted by a grouchy Nick who would grumble and say "what do u want". Without hesitation I would say "gimme one cheeseburger garbage plate everything macaroni" then step to the left. We called the sauce "grease" which is really what it was but Nick would yell at us and say "its not grease, its sauce!" The hot dogs were called red hots. Great job Sam! brought back some very fond memories. Thank you

    From my home town Rochester, NY. Garbage Plate created by nick Tahou on main st in Rochester. We have many different plates now from the rubbish to trash plate. Greatest food for after the bar hands down.

    Rochestetian here, former hots employee for 10 years. Hot meat sause has onions in it, and 3 spices. Laurie's seasoning salt, peprika and cyanne pepper. Hot meat sause juice is lard and water. We made 30 gallons at a time

      Great stuff, we have McSweeney's Red Hots/Michigans up here in the North Country. On a Glazier's red frankfurter or (if you don't want to burp up garlic all day) on an all beef hot dog, New England style bun, bury the onions, with a line of mustard...

    Sam what I like about you is that you leave all of the pretentiousness and fashion or formality at the door when you cook. You simply chase the flavors where they take you and you aren't afraid to actually fill the damn plate. By far the best cooking personality.

      About 10 years ago there used to be a plate food truck in L.A. not sure if it's still around. Flew out from Rochester to LA for a vacation. Wanted to try their plate. Couldn't find it.

    Another Rochestarian here. Raised on Tahou's garbage plates. I gotta say Sam, you did us proud! I make my own at home now since I don't live in Rochester anymore, and I do take some liberties myself to enhance the flavor, but keeping true to the original. Your mac salad looks epic and I like what you did with the hot sauce. Only thing you missed was a bottle of Frank's Red Hot to accompany the plate, otherwise great job!

    My husband and I are from Buffalo and absolutely felt like this is how the garbage plate should be!!! We always stopped for a garbage plate when visiting my husband's dad in Rochester...thank you for this awesome taste of home....aaaaaand we eat!!!!!

    Went to SUNY Oswego, in Upstate, NY. People from Rochester always talked about the Garbage plate. Utica people it was Chicken Riggies. Us Binghamton folks, all about the Chicken Speedies. And Buffalo, obviously Wings.

    Born and raised in "The ROC" Rochester, NY. We call the meat sauce "meat hot". Love the shout out to an amazing dish for a late night with a couple "Genny Screamers". Some local beer from the Genesee Brewery! Great stuff, thanks for always keeping me invested into the culinary curiosity.

    Really good recipe from upstate New York are Utica Greens. It’s Basically greens with peppers mixed in with tons of Prosciutto, Parmesan and bread crumbs mixed in.

      Utica has it's " Chicken Riggies" and Rachael Ray did a plate on her show. Not a dish as famous as Nick's Garbage Plate but a local favorite around Utica.

    Traditional "hots sauce" is seasoned with cinnamon, clove, and allspice along with black pepper and a little cayenne. That being said, yours sounds dope

    I was in Rochester once with my band. We had been on tour and I got sick and hadnt really eaten much for a couple days. We stopped at Nick Tahou's and ordered some Garbage Plates and I swear I inhaled mine. I ate it so fast, everyone in the table stared at me and laughed. That Garbage Plate didnt only healed me, It also gave me the energy to end the tour. Ive tried to find a good plate here in Florida but can't find it.

    Best part of a garbage plate is that there are so many different varieties. Motz sticks, chicken tenders, BBQ, etc. Makes them fun to make becuase you can put your own twist on it!

    My husband who is not a native Rochesterian is a huge fan of yours. He alerted me to this video. I am a native Rochesterian. I appreciate your take and what's beautiful about a GP is that you can kind of get creative with it. I'm a GP traditionalist...two burger patties with cheese and all the works, mac salad, home fries, mustard, and a squeeze of ketchup. Great hangover food! LOL! We currently live in Florida so seeing this put a smile on my face.

    I'm from Syracuse and my friends and I used to travel to Rochester at least once a month to go to different bars and clubs. The garbage plate was always my 2am drunken go-to and also for lunch the next day, to really kick the hangover before we left town. Great memories haha. Thanks for featuring this one!

    From Rochester here... Nice re-creation. Going with the Mac Salad and Potatoes and not doing the cold baked beans. The main thing that is different between all of the restaurant is the Hot Sauce they make and use.

    You are by far my favorite cook and to see you paying homage to my hometown favorite warms my heart. Went into Nick’s one night with a good buzz on and started to order. “I’ll have two hots, some Mac salad,some hot sauce.....” Nick starts yelling at me in his Greek accent.... “Garbage,garbage,garbage!!! “ That’s what we called it but I didn’t know HE did!     I went to RIT in 96/97 and that is the last time i had a garbage plate. I'm very excited to make this even though it has been so long I will not be able to remember if it is similar to Nick Tahou's but with two young boys and a 120 lb yellow lab I am all about food that can be shoveled. I bought Rochester plate spice from Stuarts spices in rochester so hopefully it comea out good! Thanks for doing this. True blast from the past that i think about every now and then.

      Even better. It's a pan that has a creeper in glasses deeply embossed on the bottom, so it doesn't heat as evenly and as well as a cheaper plain cast iron pan. It's objectively worse than a cheaper version.

    My wife was born and raised in Rochester and she said the only thing you got wrong was not using Zweigle’s hot dogs! (It’s literally a hot dog in a casing) great job with the recipe!

      I was in New York city once, the constant smell of piss and vomit made me sick; I saw a homeless guy shit on the street right in front of a hot dog stand and no one did anything. You would have to be a wierdo to like that place.

Yeah you missed about 99.9% of the city and it's wonderful cuisine. Why do you think NYC is consistently rated one of the foodie Capitols of the world?       @@alasdairgillis I went there for a competition at the Javits center. I did go to time square, the half naked women was about the best part aside from my winnings. The piss and vomit was constant though, it was everywhere. I guess you vultures are used to it. But you should travel, pretty much everywhere else on earth is better. I have never been to a worse place in my life.
      Aside from a few mortal tragedies, my visit to NYC was one of the worst experiences in my life. You people are fucking sick to even try to justify the existence of that shithole.

    I have a cast iron pan. It has Lodge written on it. It’s at least 100 years old. I inherited it from my nana when she died at age 99 in 1990. It still works great.

      Please do! Just a heads up most of our local spots have a version of this so depending on where you are in our area, there’s guaranteed to be one close by. It doesn’t have to be Nick Tahou’s. I recommend Steve T’s personally but the argument over the best plate in town is never ending for us.

    The meat sauce is basically a simple version of what we do in northeast NY called Michigan's. I'd love to see a big youtuber actually research and make Michigan sauce hot dogs to get them exposure since they're SUPER regional to our little area.

    The pasta looks like Ditalini to me. Pretty much a staple ingredient in my Italian Wedding Soup, Chicken Soup, 3-Bean Soup, or any soup that needs a bit of pasta to bulk it up.
    I'm a "Downstate" NY'er with ties to Syracuse, Oneonta, and Buffalo. The Garbage Plate is one of those road-trip "must-haves" for me any time I'm passing close enough to Rochester.

    Lil tip for mac salad. Toss in a little splash of vinegar, or if you have some leftover pickle juice, throw that in. If you're feeling adventurous, pickling juice from pickled jalapeno slices. Maybe a tablespoon or two per pound of mac, whatever you like. Alternatively or additively, some kinda mustard in the mix jazzes things up. I don't use plain jane yellow mustard.
    Supermarket mac salad around here is usually loaded with sugar, overly sweet, and gross.

    Hell yeah man! Love seeing all my fellow Rochesterians in here! I myself get one at least every other week or so.
    Home fries, baked beans, mac salad, two white hots and a burg with loaded meat hot! That means meat hot with mustard, ketchup, some Frank's red hot, yellow onions, and sometimes relish. Nice fat piece of Italian bread with butter to mop up the leftovers, god damn it's rhe greatest thing in the world.
    On top of eating them for years, been making my own for years as well and pretty much perfected my meat sauce recipe. So awesome whenever I see TH-camrs spread this amazing dish all over the world.

    Ours are different. Instead of the beef sauce we use chili w/ beans, and instead of mac salad we use homemade mac & cheese, and I often substitute a chicken-fried steak for the hamburger.
