Many people hear Gordon Ramsay's name and immediately associate him with fancy, gourmet food when in reality the man can turn his hand to the simplest and most basic of foods and make it delicious.
The margins on alcohol will always be better than the margins on food. My first thought when I heard they had a bustling bar and a dead restaurant, was to just get rid of the restaurant. Skim down the menu to have classic bar food, like sliders and apps, and expand the bar into the restaurant area. Could have even had a few small pizzas as well to still play up the pizza theme, to keep with the Italian heritage and theme. But completely abandoning a successful bar and move fully into a restaurant only, seems risky at best. Of course the show is kitchen nightmare and not bar rescue lol, so the decision was almost certainly driven more by show executives than what the owners could have actually been successful at.

It seems like the food is shit because they run around serving a ton of tickets between a way to small of a crew.
And of course the chefs seem burned out, and they have let their standards down by being just nihilistic, because of the workload. And even if they dont raise the workload, they have to minimize the menu to make it work.
