I’ll give ya the hot tip here Aaron use Australs 3mm topside sliced up and coat in the BRZ Mexicana rub let it go for a few hrs, the day before is best then cook over coals on a skillet and bang. The best tacos you’ve had. Give it a crack.
I'm jealous man. I get so few days where the weather is reasonable enough to BBQ and Im also not working not to metion we're heading for Winter now here. Next year for sure, I'll do these.
You generally don't smoke or even season the meat because it's supposed to be cooked in the consomé ingredients and extract all the flavors from the stew itself. These look pretty good but I also wouldn't call it authentic Mexican birria for those couple of reasons.
