coming from a greek pretty bang on with your tzatziki. well done. May i recommend putting meat, sliced raw onion (red or white), sliced tomatoes, hot chips, tzatziki and topped parsley.
They look great. Done plenty of Yiros (on my trusty $85 Bunnings Jumbuck lol) but never made my own bread or sauce. Gonna have to give that a go, along with your marinade. Thanks mate for the awesome vid as always
They look great! Your background as a butcher is really showing in how easily you boned out that leg of lamb! Is boning out a leg from a different animal the same basic procedure? Thinking it might be easier to get nice slices from the leg of Christmas Ham if it was boned first.

Am guessing a few years apprenticing at a butchers for someone to make the deboning done in the video look easy (plus a really sharp defining knife). Good job. Good editing.
I've done homemade yiros on the rotisserie over the goals before too, and I used your Lamb Layup and oil for the marinade and it was bloody sensational 👌🏻
