I made these this weekend and this recipe is awesome! Rosana is legit! My grocer didn't have short ribs, so I used a chuck roast that had a lot of marbling and fat. Soooo good. I also made Rosana's recipe for Tomatillo Salsa and wow! What a pairing. Some people work at matching a wine to a dinner, but I work at matching the right salsa to the meal. This was perfection, especially with the lime wedge, it really brings out the flavor. Thank you Rosana. You are a fantastic cook!

I went to a food truck today and got my first Birria tacos. I’m so glad I watched this video first because by the time I got home, the tacos weren’t crispy anymore. So I heated up a skillet and when it was hot, I put the tacos on. They got nice and crispy and it made a HUGE difference in flavor and enjoyment. I could tell the food truck used beef chuck. I’m going to make Birria myself and use your recipe with short ribs and I just know it will be phenomenal. I’m so excited to try it!! I thank you and my husband does too - he *loves* the food I make with your recipes.

Chuck roast works well for this too, and it's on sale frequently. I like to roast the tomatoes and onions, then put into a Ninja blender with water and the other ingredients. No need to strain it as the Ninja liquifies it completely.
