Spicy Korean Chicken Thighs by Jia Choi

  • This meal presents a unique take on the classic "Dak bokkeumtang," Koean spicy chicken stew. The chicken thigh is cooked in significantly less time, compared to the conventional recipe and this dish is much easier to eat than the whole chicken stew.

    Ingredients
    400g or 14oz chicken thigh
    1 large potato
    1 onion
    1~2 carrots
    4 cloves garlic
    2 tablespoons thinly sliced green onion
    1/2 teaspoon salt
    Ground black pepper to taste
    Sauce
    1.5 tablespoons gochugaru(Korean chili flakes)
    1 tablespoon dark brown sugar or 1/2 tablespoon brown sugar
    3 tablespoons soy sauce
    1 tablespoon chopped garlic
    1 tablespoon gochujang
    1/2 cup water
    Instructions
    1. Lightly season the chicken thigh with salt and pepper.
    2. Cut the carrots into larger ring-like shape. Slice the potatoes the same way as the carrots. Mince the garlic.
    3. Toss in soy sauce, gochugaru, Korean chili flakes, dark brown sugar, garlic, and gochujang. Mix the sauce. Pour water to it. Set the sauce aside.
    4. Gently pat dry both sides of the chicken thighs with paper towel. Heat a pan over medium heat and add vegetable oil to the pan. Carefully place the chicken thighs in the pan when the oil is heated. Allow them to cook until they turn brown and crispy. Transfer the chicken to a plate and turn off the heat.
    5. Drain the oil from the chicken. Eliminate the excess oil from the pan. After that, heat the pan and place the vegetables and chicken. Drizzle the sauce over them and cover the pan.
    6. Reduce the heat and gently cook all the ingredients for about 15 to 20 minutes, until the potatoes are fully cooked.
    7. Thinly slice the green onion. After the stew has been simmering on low heat, gently spoon the sauce over the stew around 2 to 3 times.
    8. Add additional water to the stew if needed(if it looks too dry)
    9. Turn off the heat and sprinkle the green onion to the stew.
    10. Serve warm with steamed rice at the side.

    This looks delicious! Just wondering, wouldn't it be a good idea to deglaze the pan with chicken stock prior to placing the veggies and the chicken?
